Hornwald Farm - Pollen Family Small family farm raising livestock, dairy, bees, and produce with modern traditional methods Now, we're expanding it all!

We're a young homesteading family working to get back to our roots, teach our kids to connect with and steward the land, and raise healthy and ethical food. We started out in Madison, WI on a 1/2 acre with 2 kiddos, a few chickens, and a garden. We live on 11 acres with our 4 kids and are building bigger gardens, an orchard, and acquiring even more animals. Our small homestead will have seasonal p

roducts including farm fresh eggs, colorful hatching eggs, layer chicks, pastured whole chickens, honey, and eventually a small amount of grass fed beef. We also raise Nubian dairy goats and one beautiful Jersey/Guernsey cow, Maple. We call her sweet milk our "Maple Milk." We'll have the occasional offspring available for sale from our dairy animals. We are big gardeners and preservers, so be sure to ask about our in-season produce, bouquets of cut flowers, and herbs from our cottage garden. We welcome visitors to meet the animals, harvest your own veggies, or come along at milking time! We're just starting out, and we'd love to have you follow along on this journey!

In the weeks before drying up our cows we froze lots of extra milk, yogurt, and butter to hold us over for 8 weeks. We're approaching the halfway point, and the stash is definitely decreasing but still going strong for now.

We froze about:
2 gallons of yogurt
12lbs of butter
~24 gallons of milk

That allows us 3gal/week of drinking milk, down from the usual 7-8 gal/week our family drank for the last 19months. Coming into this dry period we'd only had a total of 2.5 months (in the last 3+ years )without fresh milk. We've definitely grown accustomed to having it available. We'll be very happy when the girls bless us with those new babies and an abundance of our favorite food!

Favorite springtime snack: Stinging Nettle Pesto! The kids ask for this every spring, and this year Carly harvested and blanched the nettles on her own.

Recipe:

1 Colander full of fresh young nettles
2/3c nuts(cashews, walnuts, pine nuts)
2/3-1c grated parmesan
2-3 garlic cloves (we like it really garlicky, you might prefer less)
1/2-1tsp salt (to taste)
2-4 TBSP of olive oil

Wear gloves when harvesting nettles; they'll sting you! Blanch nettles in boiling water for 1-2 minutes. Drain in colander. Blend everything together in a food processor or blender. Done.
Spread on fresh bread or stir into pasta.

It's surprising how useful this hated w**d can be. Nettles are rich in minerals, antiinflammatory, and great allergy prevention! Basically a natural antihistamine & multivitamin in one! Who knew?

We've officially finished our first lactation with this gorgeous girl, and she was a breeze to milk!

Kid friendly, never needed a stanchion, doesn't even always get tied to a post at milking time, and lets anyone try milking her.
And she wasn't just a fantastic milk cow, she was a great mom too! She calf shared like an old pro, raising a big beautiful beef steer, and gave our family loads of milk on top of that.
She produced 4-5 gallons with minimal grain at her peak during her first lactation, so we expect she'll make even more this year!
Gloriana calved unassisted and was so easy to train to milk. None of the hormonal heifer behavior we've read about.

Our girl is due with her second calf at the end of May, the same week her mom is due! Now she just gets to hang out and take a break from milking while she finishes growing her next calf.

It is such an honor to have the privilege of stewarding these special animals.

This guy is gonna be a tough one to eat. Well, tough to butcher, not tough to eat. He'll be absolutely the most tender delicious guy on our plates. Second generation born and raised on our farm, Jersey Highland cross steer, currently 11 months old. Besides calf sharing with his dairy mama we didn't do any work to make him like this. He's just an in-your-pocket giant puppy dog.

The piggies have moved off of hog panels to only electric fencing for the rest of their time here. They respect the electric fence so well already!
The first couple moves are a little bit harder because they don't understand what we're trying to get them to do. The final two hogs came to the new space wheelbarrow style, held by their back feet and walked in. In a few weeks, they'll move like they've always done this. 🐖
