If you want to can on your flat-top stove, it is critical to check with your manufacturer's manual. Some manuals will say not to use a canner, while others may provide strict stipulations for canning. If your manual says that you can, be sure to read the fine print. Canner diameter may be limited, some may have an auto-shutoff that will disrupt processing, and you will need a canner with a flat bottom to heat evenly.
