🥩🔥 Brisket Experiment Complete 🔥🥩
The brisket experiment is officially in the books... and we'd call this one a success. 😎🔥
This weekend we separated the point from the flat and smoked them independently to see how everything would turn out.
The results?
🤤 Absolutely worth it.
The flat finished beautifully. It was a little strange slicing pieces that small compared to a traditional whole-packer brisket cook, but they turned out exactly how they were supposed to. Tender, juicy, and packed with that classic brisket flavor. Even the small piece that had to be trimmed off extra ended up being some mighty fine eating.
And then there were the burnt ends...
🔥 Sticky.
🔥 Smoky.
🔥 Messy.
🔥 Loaded with flavor.
They may not be the prettiest things we've ever made, but they more than made up for it in taste. Sometimes the ugliest BBQ is the best BBQ, and these little flavor bombs definitely fit that description.
From trimming and seasoning, to rendering down tallow, to tending the smoker all day, it was a long cook from start to finish. But that's just part of the deal.
Good BBQ takes time.
And when you finally get to slice into a brisket that's been on your mind all day, every minute of waiting feels worth it.
