May is when everything flourishes. Strawberries at their peak, blueberries beginning to deepen, and the first Georgia peaches making their way to market. The vegetables are generous now: fresh peas, tender lettuces, young carrots and beets, green beans that still snap clean. This is the season where the basket fills itself and the kitchen asks very little of you. A month that tastes like the beginning of summer.

Bella Royale Rose and Peach Cobbler

May has a way of flourishing. So does this cobbler.

It came to us the way the best recipes often do. A friend returned a dish filled with the most delicious cobbler, and we asked for the recipe. We've folded in a spoonful of our Limited Edition June Taylor X Bella Cucina Marmellata, scented with organic rose petals, and finished it with our Wildflower Sugar.

The peaches go in golden. The crust comes out crackling. The kitchen smells like roses, butter, and summer arriving.

Spoon while warm. A pour of cream. The afternoon flourishes.

May arrives sweet and unhurried. The air softens. The light lengthens. The garden begins. The kitchen catches the new light, and the table opens to what the season offers.

Most minestrone is a winter project. Long-simmered. Heavy with beans. Built to fill a cold day. Not this one. Seasonal spring greens cooked just long enough to soften. Peas, asparagus, snap peas, all still tasting like the garden. Stock that stays clear. At the end, a spoonful of Arugula & Pine Nut Pesto whisked with olive oil and swirled across each bowl. That last swirl of flavor is the whole thing. Vegetable soup before. Spring in a bowl after.
