Our veggie tonight was brought to you by Baker's greenhouse! Lamb's Quarters is extremely nutritious and grows wild. Most people have no idea what this is and pull it out of the ground when weeding! We prepared it in a pan with a lid with water, butter, and salt. 😋

Carrots are some of the more fun crops to grow and they come in a rainbow of colors.

I have to say the Kyoto Reds seem to be the longest carrots with the least of side root development. I will definitely grow more of those next.

Also if you juice at home and don’t like beets then try purple carrots. A great alternative to get a healthy serving of anthocyanin for antioxidant benefits.

The Amarillo carrots (yellow) are very floral and aromatic and would go great in salads to add some depth.

The orange Danvers are great sweet snacking carrots and tend to grow shorter and fatter than the others.

OMG there was almost total silence at the dinner table tonight!

The pork butt was rubbed with Mike's famous rub, except this time with the fresh red pepper flakes ground from our dried Thai chili's from the backyard! (Thanks Instant Pot)

Coleslaw was made with our multi-colored carrots from the garden! The purple carrot turned the slaw pink, but no one cared! 😁👍

This is one of the reasons I love gardening and teaching my kids how to garden. I get to watch them enjoy and in this case horde the fruits of my labor.
