Pierogi Lokshyna
Creamy Bacon, Cabbage & Egg Noodles
2 cups egg noodles 115gs
8 slices bacon, chopped
1 onion, thinly sliced
2.5 cups shredded cabbage
2 tbsp butter
1 cup cottage cheese
Salt and lots pepper
2 hard-boiled eggs, sliced
chopped chives

In large pan, cook the bacon until starting to brown but still flexiable add a splash of water
Add the onion to the bacon fat and cook until softened
Cook the egg noodles
Add the cabbage, season with pepper, and cook until wilted but still slightly crisp, about 10 minutes.
Add the cooked noodles to the skillet and toss everything together. add 1-2 tablespoon butter.
Fold in the cottage cheese over low heat until just warmed through.
Taste and adjust the salt and pep
Serve topped with chopped hard-boiled eggs, and chives if you’d like
