Squash casserole

Ingredients: 6 sliced yellow squash, 1 chopped onion, 1 cup shredded cheddar cheese, 1/2 cup mayonnaise, 1/4 cup milk, 1/2 cup crushed Ritz crackers, 1/4 cup melted butter, 1 beaten egg, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

Directions: Boil the squash and onion in lightly salted water until tender, then drain very well. Preheat the oven to 350°. In a bowl, mix the squash and onion with the cheese, eggs, mayonnaise, milk, salt, and pepper. Spread the mixture into a greased baking dish. Mix the crushed crackers with the melted butter and sprinkle over the top. Bake uncovered for 30 or 35 minutes until bubbly and lightly golden.
