The best street food in Sicily might just be panelle. 🇮🇹

This Palermo classic is proof that some of the best Italian food starts with the simplest ingredients.

One thing I learned after posting panelle the last time...the comments were divided.

In Palermo, traditional panelle is typically served with lemon. 🍋 But many Sicilian-American families grew up adding ricotta. 🧀

These are the four cheeses I use for the perfect quattro formaggi. 🤌🇮🇹

Parmigiano Reggiano for sharpness, Asiago for depth, Fontina for that smooth melt, and Gorgonzola Dolce for richness without overpowering the sauce.
