On a recent work trip with my husband to Tokyo, Japan, I had the pleasure of taking a cooking class at the Tsukiji Cooking School in English located at the Tsukijui Market. I wanted to share the Sushi Rice recipe with you! It's wonderful and will become your "Go To" recipe when making sushi or rolls. Enjoy!

Sushi Rice Recipe
1 cup raw short grain Sushi rice
1 1/4 cup water
1 ½ Tablespoon of rice wine vinegar
1/2 Tablespoon of white sugar
½ teaspoon of salt

Thoroughly rinse 1 cup of rice in cold water. Repeat the process until water runs clear. Drain rice well. Place rice in a heavy saucepan. Add water and bring to a boil. Cover. Reduce heat to low and cook for 15 minutes. While rice is cooking, combine vinegar, salt and sugar. Microwave for 1 minute and stir to dissolve sugar. Set aside until rice is done cooking. Remove rice from saucepan and place on cookie sheet. Pour vinegar over rice. With a wooden spoon, using a cut and fold motion, mix the rice and distribute the seasoned rice out to the edges of the pan to cool. Fan the rice for 5 minutes with a paper plate. Cover with Saran Wrap until ready to use.

Because I am a 🐝Beekeeper, my friends always ask me for my delicious Honey Pear Bread recipe! Now I am happy to share it with all my new friends! Enjoy!

Honey Pear Bread

Ingredients:

3 large eggs room temperature
4 cups chopped fresh pears
1 teaspoon lemon juice
3/4 cup honey
1/2 cup white sugar
3/4 cup vegetable oil
1 teaspoon vanilla extract
2 teaspoons baking powder
2 tsp ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
3 cups all-purpose flour
1 cup walnuts (optional)

Directions:

Clean and core 4 to 5 fresh pears. Chop into uniform pieces. Toss the pears with lemon juice and set aside. In a bowl, combine eggs, sugar, oil, honey and vanilla. Mix well until light and fluffy. Next add cinnamon, baking powder, baking soda and salt into the egg mixture. Gradually add the flour and fold in the pears, their juice and walnuts if desired. The batter will be thick. Line two 9x5 bread loaf pans with parchment paper. Divide the batter and bake at 350 degrees fahrenheit for 60 minutes. Remove the pans from the oven and allow them to cool for 10 minutes. This honey pear bread is perfect for afternoon tea, after school snack or breakfast. Enjoy plain or top with a lemon honey cream cheese or butter.

Impress your guests and loved ones with this easy and elegant Raspberry Chocolate Tart! Be prepared to receive compliments and applause!

Raspberry Chocolate Tart

2 cups of finely chopped pecans
6 tablespoons packed brown sugar
6 tablespoons butter
1/4 teaspoon cinnamon
8 ounces bittersweet chocolate
1 cup coconut milk unsweetened
2 pints fresh raspberries
1 Tablespoon confectioners sugar
Sprig of mint

Tart pan or spring form pan
Preheat Oven 350°

In a food processor, chop pecans, cinnamon, sugar and melted butter. Firmly press pecan crumbs into a tart pan. I used my classic Pampered Chef tart pan. Bake in a 350° oven for 20 minutes or until golden brown. Let cool.
Bring coconut milk to a boil and remove from heat. Break chocolate into chunks and microwave stirring until melted every 15 seconds.
Pour warm coconut milk over chocolate mixture and mix until smooth. Pour chocolate mixture into cooled pecan crust. Place tart into the refrigerator and let set for 1 hour. Rinse and dry fresh raspberries.
Once thoroughly chilled, remove the tart from the pan and place it on a serving dish. Start placing the raspberries in a circle from the outside in until neatly arranged. Dust with confectioners sugar and garnish with fresh mint. Enjoy!

Chicken Taquitos

Leftover rotisserie chicken - shredded OR
2 Chicken breasts - boiled and shredded
8 oz cream cheese - softened
1/2 Cup green enchilada sauce
2 scallions - chopped
1 Cup shredded cheddar
20 tortillas - flour or corn

Mix all ingredients together except tortillas. Lay tortilla flat and place 2-3 heaping tablespoons of filling in the middle. Roll up by folding half of the tortilla over the filling and pulling towards you. Continue to roll. Place seam side down on parchment lined, or silplat, baking sheet. Continue with remaining tortillas or until filling is used. Lightly spray rolled tortillas with cooking spray and place in air fryer for 12-15 minutes. Serve warm with cilantro lime dipping sauce or sour cream.

Cilantro Lime Dipping Sauce

1 8 oz package of Philadelphia cream cheese
½ Cup of green enchilada sauce
½ Cup of packed fresh cilantro finely chopped
2 Tablespoons of fresh lime juice
2 Tablespoons mayonnaise
1 teaspoon of lime zest
1 teaspoon of garlic powder
1 teaspoon of ground black pepper
1 teaspoon of celery salt
½ teaspoon of ground cumin

Microwave cream cheese and enchilada sauce for 1 minute stir to combine. Add to food processor or blender and combine with all other ingredients. Chill before serving

In 16th century Mexico, the connection between the poinsettia and Christmas begins. According to legend, a girl wanted to celebrate Jesus' birthday but because of poverty, she had no gift to offer. An angel told her to give any gift of love, so she gathered weeds along the road and places them in the manger
Miraculously, the weeds bloomed into beautiful red stars.

The poinsettia initially came to the US with Joel Roberts Poinsett, an American botanist and the first US Minister to Mexico. In 1825, he sent cuttings home to Charleston, SC. In the early 1920's, Paul Ecke, a second generation farmer in CA, discovered a grafting technique that caused the seedlings to branch. In 2002, the House of Representatives, created Poinsettia Day to honor the father of the poinsettia industry! So now you know!

Nothing brings my family around the dinner table, faster more than the traditional Puerto Rican roast pork! I serve it with yellow rice that is top with slow simmer, black beans, and a pickled cucumber, relish that crowns the top. I know that sounds a bit unusual, but trust me the flavor pop is amazing and what makes this dish so special!

Cucumber and tomato relish

One English cucumber, chopped
One tomato chopped
1/4 cup diced onion
1/8 cup chopped fresh cilantro
Pinch a sugar
Pinch of salt
2 to 3 tablespoons rice vinegar

Mix all together and add sugar, salt and cilantro to taste. Serve on top of yellow rice and black beans.

Roast pork

6 pound pork, butt or shoulder
Two cloves garlic crushed
2 teaspoon dried oregano
1 teaspoon freshly ground black pepper
1 tablespoon flour
One tablespoon olive oil
2 to 4 tablespoons commercial adobo

Remove excess fat from pork and using a sharp knife, run it under the skin so that you can pull it almost all the way back. Cut tiny slits in pork.. combine garlic, and next four ingredients rub on all sides of meat. Generously sprinkle adobo on all sides and on top of skin cover and chill at least eight hours. Overnight is best.

Place roast skin side up on a rack and shallow roasting pan Insert meat thermometer making sure it does not touch fat or bone. Bake uncovered at 325 for 35 to 40 minutes per pound or until the thermometer reaches 170 approximately 3 to 3 1/2 hours.

Skin should be crispy! Separate from the fat layer underneath and crunch away! My kids fight over this crispy treat! Crunchy skin is only good on the first day. Leftover pork can be used for Cuban sandwiches and empanadas.

Summertime freshness all year long! 🍅

 Fresh Tomato Sauce

Ingredients

5 pounds garden tomatoes, mixed OK
2 tablespoons kosher salt
1/2 cup white sugar
1 cup basil
4 garlic cloves, sliced
3 tablespoons olive oil
1/4 cup fresh lemon juice

Canning jars and lids. Sterilized and clean. Boil for five minutes.

Directions

1️⃣ Wash, clean and core tomatoes. Place in X on the bottom with a sharp knife. In a large pot, bring water to a boil and place batches of tomatoes in hot water for 2 to 3 minutes. Strain out the tomatoes and plunge them in ice cold water. Peel off skins. Chop in half and squeeze out the seeds. Place in a blender and purée.

2️⃣ Dump out water from the boiling pot and place olive oil on the bottom of the pan. Add garlic and toast until lightly browned. Add pureed tomatoes, salt, sugar, and basil. Bring to a boil over medium heat. Keep uncovered and reduce heat to a simmer. Cook and stir often for at least two hours.

3️⃣ Add fresh lemon juice. Stir and pour the cook tomato sauce into prepared canning jars. Close tightly.

4️⃣ Fill your large pot with water and place the jars in the pot, making sure they are completely covered with water. Bring to a boil and cook for 15 minutes. Remove and let cool before storing. Enjoy!

Cuban chicken is one of my favorite Fall 🍂comfort stews! It has tender moist chicken, olives, capers, and a tremendous sauce with incredible depth. Easy to cook and leave on the stove to enjoy. Serve with black beans and yellow or coconut rice. Best dinner dish ever and amazing as leftovers!

Cuban Chicken

2 1/2 lbs chicken thighs
1 1/2 TBS olive oil
1 Cup onion, diced
1 Cup celery, diced
1 Cup carrots,diced
1/4 Cup red peppers, diced
3 TBS garlic, chopped
1 Cup white wine
1 Cup Goya Saxon with coriander & annatto
1/2 Cup green olives with pimento slices
1/4 Cup capers
1 Bay leaf
1 tsp oregano
1 tsp cumin
1 tsp parsley
1 tsp thyme
1 TBS tomato paste
1 tsp black pepper, divided
2 tsp kosher salt, divided
1 can diced tomatoes, 14 oz
2 Cups chicken broth
1/2 Cup fresh cilantro, chopped

Directions:

Remove any excess fat from the thighs and generously season the chicken with half of the salt and pepper. Seat the chicken skin side Downton medium high heat for about 4 minutes each side until golden brown. Remove the chicken and set aside.

Drain any excess fat from the pot. Add olive oil and sauté onions, carrots, celery, and peppers for 6-7 minutes. Add the garlic and tomato paste and mix well.

Add the Goya seasoning on the bottom of the pot and toast slightly. Carefully add the wine and tomatoes. Add the chicken to the pot and add enough chicken broth to cover the chicken. Bring to a boil and reduce to simmer. Continue to cook for 45 minutes. To finish, stir in olives and capers. Season the chicken with remaining salt and pepper to taste and top with fresh cilantro.

Anyone can make Avocado Toast 🥑, but does it look like this?!?
We served this at a recent gathering and it was the first thing to go! Guests were begging for more! WOW your friends and family with this easy, yet elegant and satisfying dish!

AVOCADO HUMMUS TOAST 🥑

4 Ripe avocados
2 teaspoons of lemon juice
4 slices 12 grain bread
½ cup hummus
1 carrot cut in half
½ cup baby spinach leaves
¼ cup chopped scallions
¼ cup chopped cilantro + 4 tender sprigs
1/8 teaspoon black ground pepper
¼ teaspoon fine sea salt

Prepare avocados by slicing in half from the top seed around the bottom and back to the top. Twist to separate. Using a knife tap firmly onto the seed and twist the seed out. To remove the avocado from the shell, insert a tablespoon firmly at the top between the flesh and the shell. . Gently scrape down into the shell and scoop downward to remove the avocado flesh. Place cut half down on the cutting board. Discard shell and seed.

Sprinkle the halved avocado’s with lemon juice and cut the avocado lengthwise. Set aside. Prepare the hummus (inspiredtaste.net) or use store bought hummus. Grate or spiralizer the carrot. Chiffonade the spinach. Chop the scallion and cilantro (save the 4 sprigs for presentation)

Toast the bread well. Spread a heaping tablespoon of hummus on the bread. Next place 4-5 slices of avocado on each slice. Add the spinach, scallions and cilantro. Finally top with carrots and a sprig of cilantro. Generously add sea salt and pepper.

Serves 4 and enjoy immediately.
