One of the biggest mistakes I saw while training people at the bakery is over kneading the dough on the table and adding to much flour.
Cookie dough is not like bread dough! Once your ingredients are incorporated in the mixer , your dough is in its perfect state .
Here are my best tips to get soft chewy sugar cookies perfect for cutting shapes.
Avoid using too much flour when rolling dough OR roll cookie dough between two sheets of parchment paper!
Substitute using powdered sugar to roll dough instead of flour
Avoid over working the dough - meaning “kneading” it or squishing it back into a dough ball. - divide the dough into sections so you start with a small or medium Dough ball to begin rolling. Once you have a sheet of dough, try to cut as many cookies as you can, so you have less dough to rework back into a ball
