With 28 years experience sharpening edge tools, I currently maintain all the kitchen knives for the Common Ground Food Co-op, Dancing Dog Juicery, Prairie Fruits Farm, Watson's Shack and Rail, and Red Herring Restaurant. Unlike dry grinding setups, which heat the blade and can ruin the temper of the steel, I use a 1000-grit, power-driven waterstone to grind a new edge, which is then polished on a leather strop with 1-micron polishing paste. When I'm done, your knife should have a better edge than when it was factory new. I can sharpen just about anything except serrated knives – kitchen and pocket knives, machetes, swords, axes, scissors, woodworking chisels and plane blades – even reel lawn mowers!

This might be a good time to mention that I also sharpen push/reel mowers so they cut like new. Ideally this should be done every year! $20 for sharpening, lubricating, and adjusting.
