Seafood Stew

Seafood Mix
Fish Cake
Can of Clams
Bell Peppers
Onions
Garlic
28 oz Crushed Tomatoes
Frozen Vegetables (Mediterranean Blend)
Crushed Red Pepper Flakes
Old Bay Seasoning
Black Pepper

In a pot, heat some oil and soften garlic, onions and bell peppers. Add some red pepper flakes, Old Bay seasoning and black pepper.
Add crushed tomatoes, and stir until mixed well.
Add can of clams, including clam juice, and stir.
Add frozen veggie, stir and defrost.
Add frozen seafood mix and cook until shrimps are almost ready, then add frozen fish cakes.
Add more seasoning, as needed.

NOTE: since I used frozen ingredients, I didn't end up adding any chicken broth (pictured). I sprinkled some chicken bouillon.

Branzino with capers and lemony garlicky pasta. Semi-homecooked dinner at our new place, with a lot of help from Trader Joe's and our new neighbor's lemon tree that hangs over, into our patio.

Trader Joe's Frozen Branzino
Trader Joe's Garlicky Pasta - 2 bags
Capers (guess where I got mine?)
Lemon (thanks, neighbor)
S&P
Cayenne
Garlic Powder

BRANZINO: In a shallow baking dish, I laid my branzino out and seasoned. Flip them over, and seasoned again. Add half a bottle of capers on top. Squeeze lemon all over (I had a giant lemon so I squeezed half). I sliced up that lemon half and stuck under some of the branzino to lift & separate where they might be touching. Air fry at around 350 degrees for around 15 mins, then another 3-5 mins at 400 degrees.

LEMONY-GARLICKY PASTA: Add a little bit of oil to skillet on medium heat and add minced jarlic (nobody has time to mess with garlic) and soften until fragrant. Empty both bags of Trader Joe's Garlicky Pasta in the skillet. Once it's almost warmed through, I squeezed the other lemon half and topped with the rest of the capers.

Dinner was so good and it didn't take long at all! Enjoy!

Lumpiang Shanghai

INGREDIENTS:

Lumpia Wrapper
1 lb ground pork
1 lb shrimp - chopped/ground
2 tbsp minced garlic
2 tbsp soy sauce
1 cup shredded carrots
1 cup thinly sliced green onions
1 cup chopped water chestnuts
1 cup finely chopped wood ear mushroom
1 egg

DIRECTIONS:

Mix all of the ingredients (except the wrapper).

Place one wrapper on your "wrapping station" and I usually wet the top edge before I even put the filling to help seal.

Put filling across the edge closest to you and keep it thin - finger width or even thinner. Roll it close and use more water, if needed, to seal. My wrapper was wide enough to cut the rolled lumpia into 3's.

Heat about 2 inches of oil in your pot to 350 degrees. Fry your lumpia pieces until golden brown.

*TIP: Add more oil, as needed, and heat back to 350 degrees. Also, every few batches, I strain my oil to get any bits out.

Tonight, I wanted meat, mushroom, and zucchini for dinner and this is what my brain came up with.

Bison Burger (tastes like meatloaf patties 😋)

1lb ground bison
1 packet onion soup
Tablespoon of ketchup
Tablespoon of mustard
1/2 cup of breadcrumbs
Air fryer at 375 degrees for about 10 mins - flipped halfway through.

Portobello Mushroom Cap
Balsamic Vinegar
Air fryer at 375 for about 8 mins.

Zucchini Sticks
Balsamic Vinegar
Lemon Pepper
Air fryer at 400 for about 8 mins.

Tonight's dinner mission was to make something simple so we can go for a long walk. I had an idea on my morning hike - Lemon Chicken & Wild Rice in the !

How I made it:

First layer - 1 cup of wild rice - rinsed. Add 1.5 cups of hot water. Sprinkle some chicken bouillon on top. Add rack for the next layer.

Second layer, I did pot in pot. I put 3 frozen chicken breasts in an inner pot. Added some seasonings (S&P, minced garlic, etc). I put 2 cubes of frozen lemon juice and 2 pads of butter. Close the lid.

Set on high pressure for 20 minutes, and hit delay start for 1 hour...so we can go out an about.

Note: the wild rice usually takes longer than the frozen chicken. This is why I chose to "soak" the wild rice in hot water as it waited to start. It seems to have worked out.

Got a lot of stuff done yesterday, but the very last thing I finished was making lunch for my Lola for today. She loves soup and pancit...made soup for her a couple of times already, so here's a pancit with a lot of random ingredients I got from the Korean market. I can't wait for lunch with her! 🤩

Shrimp
Fish cake
Sh*take
Black fungus
Can baby corn
Can sliced bamboo shoots
Can quail eggs
Green onions
Shredded carrots
Chopped brocolli

Seafood Salad

1 pound imitation crab meat
1 can tuna
1 can crab leg meat
1/4 small onion or green onions - diced
2 celery stalks - diced
Equal parts mayo & sour cream - enough to cover the ingredients (about 1/2 cup or so)
Cayenne
Paprika
Dill
S&P, to taste

Mix and enjoy with crackers or as a sandwich! 😋 I like to top with some Red Rooster hot sauce!
