Well, time flies! It is the weekend before Thanksgiving. Swing by today and get your supplies for Turkey Day! We are re-stocked up on Brine Buckets as well as our Competition Citrus Brine. We have plenty of fuel (wood & pellets) and all of the seasonings that you will need for your cook(s) next week.

Today, we are cooking brisket on the K4L smoker. It was on at 0630 and should be ready around 1430-ish if you would like to sample. We are working on a potential contest recipe/cook so swing by and get your brisket (or turkey) questions answered.

We had a great turkey class last weekend. One of our better whole turkeys we've done here at the store. It was very flavorful and juicy! One of our class participants said he does not like turkey but came to the class for the sides and desserts. He indicated that he would eat that turkey all day long. He ended up taking home some turkey left-overs from the class.

We now have our turkey brine buckets available for you to purchase. It features the brine (Wild Hogs Competition Brine) and rubs (Meat Church Texas Sugar & Willow Seasoning High Elevation) that we used for the class. It also comes with detailed instructions for how to prep, brine and smoke a turkey. Separately, the bucket and contents would sell for over $75. We have them priced @ $60. That is a savings of 20%.

So tomorrow is Saturday and with that y'all know we'll be rolling smoke here at CSGS. We have a customer that just purchased Kelly's new drum smoker. He is wanting to see how we use the drum. We have a couple slabs of St. Louis spares in the chill chest, so we will be cooking ribs on the drum tomorrow. We will also be using Meat Church's newest rub; Texas Sugar. In addition, we will be cooking up one of our favorite appetizers tomorrow; Pumpkin Queso Fundido. Swing by and sample some of our wares!

We are smokin'! Continuing with our theme of comfort foods this month we have a couple of goodies coming off the smoker for you to sample. We are working on our Thanksgiving stuffing smoked in a pumpkin. Really yummy and look, no dishes to wash when you are done eating! We also have a batch of brown butter cornbread smoked a cast iron skillet. Swing by and get your goodies!

While you are here, you can learn about our Thanksgiving class that will be held on 5Nov. The class starts at 1730 and lasts until the last questions are asked and answered.

By the way, we just got in another order of the below Worcestershire sauces. Get 'em while they last!

What be-u-ti-ful day here in the Springs. I mean, just check out the view in the below pic. We are working on a pie recipe and sittin' out enjoying the weather and sites! The pie is almost done smoking, then it has to rest for 15 and then it goes into the chill chest to solidly set the cream. Swing down and get your sample here shortly.

Now that the American Royal is over, our minds (and stomachs) are turning back to the season and comfort foods. Today we are smoking a red chili made with Meat Church's chili seasoning along with our smoked pulled pork, ground brisket trimmings and ground pork trimmings. Next week we will turn our attention to some smoked brisket mac n' cheese.

Keep an eye open for our upcoming classes that will start back up in November. We'll do a spatched-cocked turkey using the items from our turkey brine kit. December is still up for discussion, so if you have any suggestions post your ideas below. Or better yet, let us know when you stop by to pick up items for your cook.

We are continuing to prep for the American Royal this weekend. On tap for you to sample are some baby back ribs that we did on the K4L barrel smoker. We also have some chicken done on the Louisiana Grills Black Label 1000. Chicken will be ready to sample @ noon and the ribs by 1215. Swing down and sample the wares!

We are also working on a pumpkin dessert. It won't be ready for sampling until tomorrow. But you can swing by and check out the cook is going.

Just to update y'all, the store will be open Monday thru Saturday from 1000 until 1800. We may be short-staffed the end of the week so please bear that in mind. Also we will post in the store how we are doing at the American Royal. So you can check the store, online or our page. See all y'all next week and Keep on Smokin'!!

So, what is on the grill today? We are doing our first cook with the new K4L barrel smoker. We burned it in earlier this week and we were impressed with its temp responsiveness. So the next challenge up is.......BRISKET!! The 15lb brisket went on at 0700 this a.m. and will be ready for sampling at 1500 this afternoon. That includes about a 2 hour rest. We are still gettin' ready for the American Royal, so we will be working our veggie dish cooked on the Pit Boss Ultimate griddle. We need to finalize our presentation. Don't worry tho, we will have some samples for you. 🙂
We will also be working the presentation for the potato category as well. So lots going on at the store today. Swing by and grab what you need for your own cook or just swing by to sample and say howdy! Either way we'll be looking forward to your visit!

To continue the theme of new at the store, we have a new set of rubs and sauces. They are a Colorado based company (Highlands Ranch) and have a line of BBQ rubs and sauces. Their Sweet Heat Rub is the 2022 American Royal "Best Rub on the Planet - Hot Category" winner. This rub starts off with a sweet note and finishes with a mild back end heat perfect for chicken and pork. We used their SPG and Memphis Style on some ribs for our First Responders cook this past weekend. Those ribs were a BIG hit. Swing by and ask to sample their line of rubs and sauces. We think it will be a hit with you as well.

What's a cookin' this weekend? Our plans are to continue preparing for our trip to the American Royal the end of this month. We'll be cooking a brisket on the new K4L barrel smoker. We seasoned our new barrel in yesterday. We were very impressed with how responsive the barrel temps were as we tested multiple low & high settings. We'll do the brisket test and if it performs as expected, the barrel will go with us to the American Royal. Swing by after lunch and get your brisket sample! We'll also be working our veggie category entry. Samples will be available for this as well. See all y'all this weekend!

Finally they have arrived! The K4L barrel smokers are now in the store. If you are looking for a barrel but afraid of the over 1K price point, then these are worth taking a look. Complete with a vortex-style diffuser and three position rack, this under $600 barrel from is worthy of a look. Come on down to the store, we have them assembled ready for you to inspect . We will also fire up the drum this weekend and cook up a brisket. Last chance to do a practice cook before we head to the American Royal. Come down and see it in action this Saturday.
