Compost Tea 🍵 Give your garden a natural boost with compost tea — nature’s energy drink for plants!
It’s packed with nutrients and beneficial microbes that help your soil and plants thrive.

How to make it:

Fill a bucket with water (rainwater is best!)
Add a few shovelfuls of finished compost in a mesh bag or old pillowcase
Let it steep for 24–48 hours, stirring occasionally
Strain and pour directly onto soil or spray on leaves
That’s it! Your plants will thank you.

Ever tried dandelion syrup? It’s sunshine in a jar!
Made from foraged dandelion blossoms, this golden syrup has a light honey-like flavor with a hint of floral citrus.

How to make it:
Pick fresh, pesticide-free dandelion heads, remove the green parts, then simmer the petals with water, strain, and cook the liquid with sugar and lemon to syrupy perfection.

What’s it good on?
Try it on pancakes, toast, yogurt, or in tea and cocktails for a sweet floral twist!

Slightly freeze (cuts way better cold) Remove most of fat and sinewy bits. Cut into chunks 1-2”, put in jars raw (pack tight it shrinks). I tend to drop maybe a half tsp per qt of McCormick seasoning (Salt, pepper, garlic - can find at Costco and some stores in bulk) and dry can. Of all the meat I can (a lot) this is my favorite by far. Not dry at all, makes it’s own juice. Just a little seasoning but not enough that it can be used for a variety of dishes.

Process time: 3hours or more depending on elevation

Hot Pepper Mustard

INGREDIENTS:
40 medium-large banana peppers
4 hot peppers (optional for additional heat)
A quart of prepared yellow mustard
1 quart of apple cider vinegar
1 1/4 cup all-purpose flour
5 cups white sugar
1 1/2 cup water
1 teaspoon Kosher salt
INSTRUCTIONS:
1. Seed and chop peppers into fine pieces. *We use the Hamilton Beach Food Processor to complete this task in a fraction of the time.
2. Place peppers in a large stockpot. Add the remaining ingredients and stir.
3. Bring mixture to a boil, stirring constantly. Boil for 5 minutes. Continue to stir to prevent the mixture from sticking to the bottom of the pan.
4. Place in warm, sterilized pint jars, leaving 1/4 inch head space. Wipe rim and add warm lid and finger tighten the ring. Place in hot water bath and process for 10 minutes (adjust for altitude).

Anyone make Apple Scrap Vinegar?

Recipe:
5 gallon food grade bucket
Enough apples sliced to fill bucket half full

4 cups of sugar-optional if super sweet apples. 🍏 do not use soft apples 🍎
Cover all with water

Cover bucket with breathable cloth, not cheese cloth weave is large and will let fruit flies through. You could use muslin or scrap fabric
Store in cool area out of sunlight.

Stir everyday for a week making sure all the apples get submerged.

Add water if there is evaporation.

After a week set it aside and leave it be. Check to make sure nothing fuzzy is growing.

You will notice a slimy blob growing this is the mother. I leave mine for a month or 2 with apples still in then strain everything.

I divide into glass gallon jugs making sure a bit of the mother gets into each one store until needed.

Here’s when you should pick your 🍅 :

At the “breaker stage.” This is when the tomato begins to transition from green to red, taking on a slightly pinkish hue.

At this stage, the tomato has everything it needs to ripen off the vine, as the exchange of nutrients and water from the plant to the fruit slows significantly.

This occurs due to a layer of cells in the stem that gradually separates the fruit from the plant. Harvesting now reduces the weight on the branches and helps avoid heat-related problems for your tomatoes. Also helps keep birds and other critters from eating your harvest or them from splitting. Lay them on the window 🪟 seal and let them ripen up. I’ve never tasted a difference between vine ripen or window.

It’s an obvious choice!☺️

How does nettle leaf help allergies?

Nettle or stinging nettle is another one of those “weeds” that has much to offer. Due to its high contents of iron, silicon, Vitamin K and potassium, nettle leaf tea (or infusion) is very nourishing. Nettle leaf also contains quercetin which helps alleviate allergy symptoms. Quercetin is an antioxidant that helps slow the body’s release of histamines. Histamines cause allergy symptoms in our body and our body usually releases them when in contact with an allergen (like that lovely pollen floating in the air). The quercetin in nettle leaf slows the release of histamines while fighting inflammation, making it an ideal natural contender in the anti-allergy market.

I drink nettle tea to combat responses I have from food that is inflammatory. However mostly I drink nettle tea to enjoy it's many health benefits and nutrition. It’s a staple in my medicine cabinet – whether for cold or inflammation - and in my tea cabinet and daily vitamin tea. As always, do your research and you can talk to your doctor before taking something new.
