Ingredients
• 1 cup (150g) mixed dried fruits
• ¼ cup (60ml) orange juice (for soaking)
• 1 cup (225g) unsalted butter, softened
• 1 cup (200g) brown sugar
• 4 large eggs (room temperature)
• 2 cups (250g) all-purpose flour
• 1 tsp baking powder
• ½ tsp ground cinnamon
• ¼ tsp nutmeg
• ¼ tsp salt
• 1 tsp vanilla extract
• 2 tbsp milk (if needed for consistency)
Instructions
Soak the mixed dried fruits in orange juice for at least 1 hour (overnight for best flavor). Preheat the oven to 160°C (320°F). Grease and line an 8-inch round cake pan. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, mixing well after each. Stir in vanilla extract. In a separate bowl, sift together flour, baking powder, cinnamon, nutmeg, and salt. Gradually fold the dry ingredients into the wet mixture. Add the soaked fruits (with any remaining juice) and mix until just combined. If the batter is too thick, add 1–2 tablespoons of milk. 1 ½ tsp instant yeast (5g)
1 ¾ cups warm water (410ml)
2 tsp salt (10g)
3 tbsp extra virgin olive oil (45ml)
Instructions:-
In a large mixing bowl, combine flour and salt. In another bowl, dissolve yeast in warm water.
Gradually mix the yeast mixture into the flour until a shaggy dough forms.
Knead on a floured surface for about 10 minutes until smooth.
