📋 Ingredients:

1 lb ground beef or turkey

1 small onion, chopped

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

2 cups beef broth

1 cup elbow macaroni (uncooked)

1 tbsp chili powder

1 tsp cumin

1/2 tsp smoked paprika (optional)

1 cup shredded cheddar cheese

Salt & pepper to taste

Optional toppings: sour cream, chopped green onions, jalapeños

👩‍🍳 Instructions:

In a large pot or deep skillet, brown ground meat with onion and garlic. Drain excess fat.

Stir in beans, diced tomatoes, broth, chili powder, cumin, and paprika.

Add macaroni, stir, and bring to a boil.

Reduce heat, cover, and simmer 15 minutes, stirring occasionally until pasta is cooked and liquid is mostly absorbed.

Stir in cheese until melted. Season with salt and pepper.

Serve hot with optional toppings.

✨ Tip: For extra heat, add a dash of hot sauce or chopped fresh chili peppers!

🍗🍚 Slow Cooker Chicken and Rice Casserole – Set It and Forget It Comfort (Prep Time: 10 minutes)

📋 Ingredients:

4 boneless, skinless chicken breasts

1 cup long-grain rice (uncooked)

1 can (10.5 oz) cream of mushroom soup

1 can (10.5 oz) cream of chicken soup

1 1/2 cups chicken broth

1 small onion, chopped

1 cup shredded cheddar cheese (optional)

1 tsp garlic powder

1/2 tsp dried thyme

Salt & pepper to taste

👩‍🍳 Instructions:

Spray slow cooker with nonstick spray.

Place chicken breasts at the bottom.

In a bowl, mix rice, soups, broth, onion, garlic powder, thyme, salt, and pepper. Pour over chicken.

Cover and cook on low for 4–6 hours or until rice and chicken are tender.

About 30 minutes before serving, sprinkle cheese on top and cover to melt.

Serve warm and enjoy!

✨ Tip: For a veggie boost, add frozen peas or chopped carrots along with the rice mixture!

📋 Ingredients:

1 lb boneless, skinless chicken breasts, sliced

12 oz fettuccine or penne pasta

3 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

2 tbsp butter

Salt & pepper to taste

Fresh parsley for garnish

👩‍🍳 Instructions:

In a large skillet or pot, melt butter over medium heat. Add chicken slices and cook until browned and cooked through. Remove and set aside.

In the same pot, sauté garlic until fragrant.

Add pasta, chicken broth, and heavy cream. Bring to a boil.

Reduce heat, cover, and simmer 12–15 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.

Stir in Parmesan cheese and cooked chicken. Season with salt and pepper.

Garnish with fresh parsley and serve immediately.

📋 Ingredients:

1 lb boneless, skinless chicken thighs or breasts, cut into chunks

2 tbsp butter

1 small onion, chopped

2 cloves garlic, minced

3 cups chicken broth

1 cup milk

1 cup all-purpose flour

2 tsp baking powder

1/2 tsp salt

1/2 cup milk (for dumplings)

1 cup frozen peas and carrots

Salt & pepper to taste

Fresh parsley for garnish

👩‍🍳 Instructions:

In a large skillet, melt butter over medium heat. Add chicken and cook until browned. Remove and set aside.

In the same skillet, sauté onion and garlic until softened.

Pour in chicken broth and milk; bring to a simmer.

In a bowl, mix flour, baking powder, salt, and milk to form dumpling batter.

Return chicken to skillet and add peas and carrots.

Drop spoonfuls of dumpling batter onto simmering broth. Cover and cook 15 minutes without lifting the lid.

Season with salt and pepper, garnish with parsley, and serve hot.

4 boneless, skinless chicken thighs or breasts

2 tbsp olive oil or butter

1 medium onion, finely chopped

2 cloves garlic, minced

1 tbsp sweet paprika

1/2 tsp smoked paprika (optional, for depth)

1 cup chicken broth

1 cup sour cream

Salt & pepper to taste

Fresh parsley for garnish

👩‍🍳 Instructions:

Season chicken with salt, pepper, and paprika.

Heat oil/butter in a large skillet over medium heat. Brown chicken on both sides until golden, about 4 minutes per side. Remove and set aside.

In the same skillet, sauté onion and garlic until softened.

Stir in chicken broth, scraping up any browned bits.

Return chicken to the pan, cover, and simmer for 15 minutes until cooked through.

Remove chicken, stir sour cream into the sauce, warming gently without boiling.

Return chicken to the sauce, spoon over, garnish with parsley, and serve.

1 1/2 lbs beef stew meat, cut into cubes

2 tbsp vegetable oil

1 onion, chopped

3 cloves garlic, minced

4 cups beef broth

3 carrots, sliced

2 celery stalks, sliced

3 potatoes, peeled and cubed

1 cup green beans, trimmed and cut

2 tsp dried thyme

1 tsp dried rosemary

Salt & pepper to taste

Fresh parsley for garnish

👩‍🍳 Instructions:

In a large pot, heat oil over medium-high heat. Brown beef cubes on all sides. Remove and set aside.

In the same pot, sauté onion and garlic until softened.

Return beef to pot, add beef broth, thyme, rosemary, salt, and pepper. Bring to a boil.

Reduce heat, cover, and simmer for 1 1/2 to 2 hours until beef is tender.

Add carrots, celery, potatoes, and green beans. Simmer uncovered for another 30–40 minutes until vegetables are tender.

📋 Ingredients:

1 lb ground beef or turkey

1 cup long-grain rice (uncooked)

3 large bell peppers (any color), diced

1 small onion, chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

2 cups beef or chicken broth

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1 cup shredded cheddar cheese (optional)

Fresh parsley or basil for garnish (optional)

👩‍🍳 Instructions:

In a large skillet or pot, brown the ground meat over medium heat until cooked through. Drain excess fat.

Add onion and garlic; sauté until softened.

Stir in diced bell peppers and rice. Cook for 2 minutes.

Add diced tomatoes, broth, Italian seasoning, salt, and pepper. Stir to combine.
