Don’t be afraid to make a large salad as your main dinner meal! Especially in the summer, it’s a great, refreshing option. If you keep veggies on hand, then fill your salad with whatever you have on any given day. Just be sure to add 1-2 protein sources such as meat, beans, hard-boiled eggs or cheese.

Tonight our salad had lettuce with a small amount of kale mixed in, tomatoes, bell peppers, black beans, roasted sweet potatoes and topped with homemade croutons. Add a dressing of your choice and you’re ready to eat!

Do you find yourself on the road a lot in the summer? Do you also find it challenging to keep your food on budget when you travel?

Don’t be afraid to bring food with you! It may be hard when everyone else is stopping to eat out but you’ll save money and probably eat healthier too.

My son had a summer ball tournament this weekend 3 hours away. So we packed sandwich rolls, lunch meat, cheese, chips & fruit and hit the road. We brought Gatorade powder to so he can stay hydrated and not be so tempted by soda at the snack bar. And here’s one more tip, freeze water in half gallon plastic bottles and use them to keep food cold in addition to traditional cold packs. Then as they start to melt, you have nice cold water to fill your personal water bottles.

Have you ever found yourself avoiding healthier food options because they’re too expensive? I know I have!

Because of that, I was so excited when I heard about Misfits Market. I’ve received several boxes now (I wanted to wait and make sure I liked it before I posted about it) and have been very pleased with the produce and products I received. Almost everything is organic and you get to choose how much you want of each item and how often you get a box. So far I’ve found that having extra fruits & veggies in our house is helping us to consume more. This week’s box is fruit heavy because with kiddos home for the summer there’s lots of snacking on fruit but they have a great selection of veggies too.

Do you check the clearance section at your local grocery store when you shop? If you don’t, you could be missing out on some amazing deals!

We stopped at the store today after church to use the bathroom and stumbled on a huge grocery clearance at City Market. I picked up all these items for $12.66!! Regular price these would have been $47.87. And most of these items are not extras but things we buy regularly (the PopTarts are a bonus 😉).

Plus, I don't expect that anyone is waiting anxiously for me to post my meal plans each week so that they can make the exact same meals. My hope is that my meal plan will encourage you to meal plan (if you don't already) or give you some meal ideas when you get stuck (and that happens all the time for me!).

I think that warm homemade chocolate chip cookies might have been sent straight from heaven! Plus my teenage daughter made these this week so I got to enjoy them without the extra work. Win-win! Lots of our favorite meals on the menu this week because how can you go wrong with hamburgers, pizza or meatball subs? Only one meatless meal, Beans & Cornbread, made it on the menu this week so I'll have to plan a few extra meatless meals next week. But sometimes comfort foods just need to make a appearance especially in these crazy times!

At least my kiddos had their last day of at-home school last week! Are your kids done yet? If not, when do they finish?

Although it's not hunting season, there may be people like us that still have meat in the freezer left over from the fall. And with a rumored meat shortage lurking, I'm very thankful for what we have.

I used round steak for my Venison Stew recipe (https://recipesformom.blogspot.com/2020/05/venison-stew.html) but you could definitely use whatever cut of meat (even ground) that you have left. Beef or elk meat could also but used in this recipe.

Make or grab a loaf of French or sourdough bread to go with your stew and you've got a great meal anytime of the year! If you're a hunter but don't have any meat left from last year's hunt, be sure to save or Pin this recipe and save it for once your freezer's full again.

A bit late (again!), but we all eat all the time so use these meal plan ideas whenever works best for you. You can find this week's meal plan on the blog here: https://recipesformom.blogspot.com/2020/05/weekly-meal-plan-april-2020-week-4.html. The weather has been getting warmer here in Colorado which means more chances to cook and eat outside. But also less meals in the over because we have no central AC.
