WE’RE HOME.

After years of prayers, paperwork, and every rub sold carrying us one step closer, we’re back home with our son.

To every one of you who bought a bottle, shared a post, or prayed for our family: you were part of bringing him home. We can’t thank you enough.

And the first meal we wanted? A big, beautiful smoked ribeye.

Here are our Top 5 Tips for a Smoked Ribeye using Gourmet Spicy Steak Seasoning on a pellet smoker:

1. Go thick or go home
Grab a ribeye at least 1.5” thick. Thin steaks overcook before the smoke can do its job.

2. Season early and generously
Coat all sides with Gourmet Spicy Steak Seasoning 45 minutes ahead, or the night before uncovered in the fridge. The flavor works its way in, and the surface dries for a better crust.

3. Low and slow first
Run your pellet smoker at 225°F. Oak or hickory pellets pair perfectly with the spicy kick.

4. Cook to temp, not time
Pull it at 115–120°F internal for medium-rare. A good thermometer is your best friend.

5. Reverse sear it HOT
Crank the heat to 500°F+, or use a ripping-hot cast iron. Sear 60–90 seconds per side until you hit 130–135°F. Rest 5 minutes, then slice.

Clean ingredients. Real heat. Family at the table. That’s what it’s all about.

Grab Gourmet Spicy Steak Seasoning at the link in bio.
Comment “RIBEYE” if it’s on your weekend menu!

WE’RE HOME. AND THE SMOKER’S LIT.

Back from Vietnam with our son, and our family is bigger and our hearts are full. First cook back is a pulled pork.

Today’s lineup:

Honey Bacon Hog + Bacon Hog for a savory-sweet bacon double-up
Offset from Old Country BBQ Pits
Pecan wood + Bear Mountain BBQ Pellets Hickory chunks

7 TIPS FOR PERFECT PULLED PORK

1. Go bone-in pork butt. It has more flavor and stays juicier.
2. Season heavy and early. Layer Bacon Hog first, then Honey Bacon Hog on top.
3. Hold steady at 225–250°F with clean, thin blue smoke.
4. Spritz every hour after the bark sets.
5. Wrap in butcher paper at about 165°F to push through the stall.
6. Pull it when it’s probe tender, around 200–205°F. Go by feel, not by the clock.
7. Rest at least 1 hour, then save the juices. They’re your secret to reheating leftovers all week.

ONE COOK = A WEEK OF MEALS

• Pulled pork bánh mì, a nod to our trip
• Smoky street tacos with slaw and lime
• BBQ pulled pork mac & cheese
• Pulled pork fried rice

Faith. Family. Fire. Food. It’s good to be home.

Grab Honey Bacon Hog + Bacon Hog at the link in bio.
