Creamy Bacon & Mushroom
Chicken Alfredo
Yields 6-8 servings
Alfredo Base:
1/2 lb bacon, cooked and crumbled
1.5 Cups sliced portobello mushrooms
1 small shallot-finely diced
2T minced garlic
1/2 tsp each of salt, pepper & red pepper flakes
4T butter
For the Chicken
1T olive oil
3 Cups boneless chicken thighs
1-2 tsp garlic powder
1/2 tsp salt & pepper
For the Sauce
1 quart heavy cream
2 Cups freshly grated parmesan and Asiago Cheese
Optional: Whisk in 1 egg yolk for extra richness
Directions:
Cut bacon and slice/dice veggies
In a large skillet, cook the bacon until crisp. Remove and set aside, reserving the bacon grease in the pan. Add the sliced mushrooms to the bacon grease and sauté for about 4 minutes or until softened. Stir in diced shallot, garlic, salt, pepper, butter & red pepper flakes. Cook until fragrant, 1-2 minutes. Remove & Set aside.
Cook the pasta-
Bring a large pot of salted water (1-2T salt added) to a boil. Cook pasta according to package directions.
*Before draining.... reserve 1/2 cup of pasta water & set aside
Cook the Chicken-
In the same skillet, heat the olive oil over medium heat and season Chicken with garlic powder, salt & pepper. Add to the skillet and cook until browned and fully cooked through. Now Add back in the mushrooms & bacon mixture, stirring to combine. Reduce the heat to low
Make the Alfredo Sauce-
To the skillet, pour in heavy cream and allow to simmer gently until slightly reduced, about 5-7 minutes. Gradually add the grated cheese blend a little at a time, stirring continously until completely melted and smooth. Remove from heat and cover 1-2 minutes.
*Optional- For an extra-rich Sauce, quickly whisk in the egg yolk after removing from heat.
Now add the pasta to the sauce and toss till evenly coated. If needed, add reserved pasta water a little at a time till your desired consistency is reached.
Serve immediately and enjoy.
Cooks Notes:
🔥Freshly grated cheese melts more smoothly & creates a silkier Alfredo sauce.
🔥Chicken breast may be substituted
🔥The egg yolk is optional, but add a luxurious richness and depth to the finished sauce.
🔥Garnish with additional parmesan, fresh parsley and a bit of cracked black pepper just before serving.
