One of my favorite summertime side dishes; sauteed tomato, garlic and zucchini. And the best part? Cooking the tomatoes until they become jammy. They become so sweet and end up making such a delicious base for the other ingredients.

Sharing irises that are currently in bloom in my garden. They definitely bring me happiness and are a beautiful reminder of my mom. She had an amazing variety of different iris colors. Our kitchen always had the delicate aroma of iris wafting through the air.

What do I do when a glut of eggs and my love of Mexican food merge? I make this breakfast casserole. The bottom layer is roasted and diced green chiles. This is topped with beaten eggs with a generous splash or 2 of milk that is seasoned with salt and chipotle powder Then I add about 1/3 cup of queso fresco to egg mixture. Pour this over the green chiles. Sprinkle with your favorite melting Mexican cheese. And finally top it all with rings of fresh jalapeno chiles. Bake at 350F for approximately 40 minutes.

Knitted the Potato Chip scarf (because the edges are 'ruffled'). I had a 100gram skein of Schoppel and used the entire skein to make the scarf. It was a fun knit of short rows which created the ruffled appearance.

Way to go Colorado! And I really hope that this opens the door for more cottage foods to be legally sold. As an urban homesteader, this does my heart proud. And for the record, the best tamales I have ever had have been made by abuelas selling them at intersections.

Home tamale businesses are the impetus for a new bill giving entrepreneurs a break from regulations.
