I tried something new today! I roasted some chunked up veggies that I saved this week in a large zip bag in the fridge. Once I had the kinds I thought would be good together, I added salt, pepper, Italian seasoning, and olive oil to the bag. (I used quartered small red potatoes (skin on), zucchini and summer squash moons (seeds out, skin on), baby carrots, radishes (halved or quartered depending on size), sliced onion) I zipped it up and then gently rubbed the bag with my hands to make sure each chunk had contact with the oil and seasonings. I put them in a large roasting pan and into the oven at 400 degrees. I roasted them until they were starting to get tender. (Maybe 35-40 minutes). I then turned the broiler on to give them a little char. Just a few minutes. Keep an eye on them! It made 2 nice size servings that I can pair with a nice protein (meat, eggs,...) I had a sample. Very tasty! 😁 Pictures are before and after.
