Moist Carrot Cake

Ingredients
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 1/2 cups butter
- 2/3 cup canola oil
- 3 cups shredded carrots
- 1 cup confectioners sugar
- 1/2 package (4 oz) cream cheese
- 3 eggs
- 1 1/2 cups flour
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 4 tablespoons orange juice
- 1/2 teaspoon salt
- 3 cups sugar
- 1 teaspoon vanilla
- 1 teaspoon vanilla extract

Preparation

Preheat the oven to 350F degrees.

Grease cake pan.

Combine sugar, oil, concentrate, vanilla and eggs.

Stir in baking powder, baking soda, cinnamon, nutmeg and salt.

Add flour; mix.

Stir in carrots.

Pour batter in pan.

Bacon Wrapped Tofu Tacos

Ingredients
- 1 12 oz package firm tofu, drained
- 1 package flour tortillas, taco or fajita size
- 8 oz package cream cheese, softened
- 3 fresh jalapeno peppers, de-seeded and diced small
- 2 cups Monterey jack cheese, shredded
- 1 pound bacon, cooked
- 1 cup chicken broth
- olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 2 garlic cloves, minced

Preparation

In a small bowl combine the cumin, chili powder, paprika, 1 minced clove of garlic and 2 tbsp of olive oil. Slice the tofu very thin, about 1/2 inch per slice, then rub each slice with the spice mixture. Set aside.

Heat about 1 tbsp olive oil over medium high heat in a large pan.

Add the tofu, a few slices at a time, watching carefully. Flip after about 1-2 minutes. Cook until done. Half each piece, wrap with bacon, then set aside and cover with aluminum foil.

Do not wash the pan out now, put it back on the stove, reduce heat to medium and add the remaining minced garlic clove, 1 tbsp olive oil and diced jalapeno.

Sauté until the peppers are almost getting a little bit brown and everything is fragrant.

Add the cream cheese, 1/2 cup cheese and chicken broth.

Whisk and bring to a slight boil; reduce the heat if you have to, preventing it from scorching. Once it's combined, add a sauce for consistency, salt and pepper to taste and pour into a separate bowl; cover.

Bring the heat back up to medium-high, and add another tablespoon of olive oil to the pan.

When hot add one tortilla at a time, turning after about 15-20 seconds to the other side. The end result will be tortillas slightly brown around the edges and a little bubbly in the middle.

Set aside and cover.

To serve, stuff a tortilla with bacon-wrapped tofu, and drizzle the jalapeno crème on top and some Monterey jack.

Tasty dish with juicy shrimp, superb! 🌶️🦐👶🌽

Lemongrass And Chilli Prawns

Ingredients
- 1/2 kg tiger prawns - remove head, gently pull out the veins; wash and pat dry.
- 2 red chilies - chopped
- 4 garlic - chopped
- 1 inch ginger - chopped
- 1 lemongrass - - chopped
- 1/2 tbsp dark soy sauce
- 1/2 tbsp light soy sauce
- 1 tsp sugar
- 3-4 kaffir lime leaves -tear into pieces
- 3 tbsp oil
- 1/2 cup water
- salt to taste (only if needed)

Preparation

Sauté chilies, garlic, ginger and lemongrass.

Add prawns, dark and light sauce, sugar and season with salt.

Stir all in and pour water (just enough to cook the prawns).

Cook over medium size heat until the sauce becomes thick.

Put in lime leaves.

Stir once more and remove from heat.

Intense chocolate cravings strike! Yummy! 🍫🍪🥣

Eggless Chocolate Brownies

Ingredients
- 1 1/3 cup all purpose flour
- 2 Tsp baking powder
- 1 Tsp chocolate extract
- 100g dark chocolate, chopped
- 1 Tsp instant coffee powder
- ½ cup milk, at room temperature
- 1 Tsp salt
- 1 cup caster sugar
- 130g unsalted butter, softened
- 1 Tsp vanilla essence
- 1/3 cup chopped walnuts

Preparation

Melt the chocolate and butter in a double boiler (see here).

Once the chocolate and butter melted, set aside and stir nicely with a spatula to make sure the mixture is smooth and lump free.

Sift the flour, baking powder, salt and coffee powder together in a separate bowl.

In the melted chocolate beat in sugar, vanilla, chocolate essence for 3 - 4 minutes at low speed.

Alternatively mix in sifted flour, walnuts and milk until all moistened and combined well.

Do not mix the batter for too long. Preheat the oven to 180 degree Celsius.

Grease an 8 inch square tin and line with a parchment paper.

Pour the mixture into the prepared tin and bake for 25 minutes.

Remove from the oven and place on a wire rack to cool.

Cut into squares and serve hot with vanilla ice cream.

Delicious, ultra-easy dinner! 🦪🍲🫒🧈

Baked And Breaded Scallops

Ingredients
- 2 tablespoons of butter, melted
- 1/8 teaspoon of garlic powder
- 1/2 of a lemon, squeezed
- 1/2 teaspoon of lemon pepper
- 1/2 cup of macadamia nuts, crushed
- 1/2 cup of Panko bread crumbs
- 1/8 teaspoon of salt
- 1 pd of scallops

Preparation

Grab a 99 inch pan and add your melted butter and lemon juice to it.

Now add your scallops on top of the lemon butter and spread them around the pan evenly.

In a separate bowl, mix together your crushed nuts, panko, salt, garlic powder, and lemon pepper.

Pour the mixture over the top of the scallops and pop them in the oven set to 350F degrees for about 25 minutes.

Lemon Chicken Cutlets

Ingredients
- 1/8 teaspoon freshly ground black pepper
- 1/4 cup butter or margarine
- 3 tablespoons capers rinsed
- 4 boneless skinless chicken breast halves butterflied
- coarse salt to taste
- 1/2 cup dry white wine
- 1/4 cup all-purpose flour
- juice of 1 lemon
- 2 tablespoons extra-virgin olive oil

Preparation

Place chicken breasts between two sheets of plastic wrap; pound with a mallet to an even thickness.

In a shallow dish, combine flour with a generous amount of salt and pepper.

Dredge chicken in the flour mixture, tapping off excess; set aside.

Heat 2 tablespoons butter and the oil in a large skillet over medium-high heat until the butter is foamy.

Add chicken, and cook for 2 minutes.

Turn, and cook for 2 minutes more.

Remove chicken from pan, and keep warm.

Pour off any excess fat.

Add wine, the remaining 2 tablespoons butter, the capers, and lemon juice.

Cook, swirling the pan to melt the butter, until reduced and slightly thickened, about 2 minutes.

Pour over chicken, and serve immediately.

This recipe yields 4 servings.

Classic pancakes are always a favorite brunch food for the weekend! 🥞🍁🥥🥛

Matcha Pancakes

Ingredients
- 1 cup almond milk
- 2 tsp baking powder
- 1 egg
- 1 cup flour
- 1 1/2 tsp matcha powder
- 1 tbsp oil
- 1/4 tsp salt
- 1 tbsp sugar
- 1/3 cup white chocolate chips

Preparation

Mix flour, sugar, baking powder, matcha powder and salt.

In a separate bowl, add milk, egg, oil and mix well.

Pour wet ingredients into a bowl of dry ingredients, stir to combine.

Fold in chocolate chips.

Scoop about 1/4 cup batter to a lightly oiled saucepan over medium-high heat.

Brown on both sides.

Serve immediately.

Gluten Free Brownies

Ingredients
- 1/2 cup Semi-sweet Chocolate Chips, Casein Free
- 1 cup sugar
- 3 whole eggs
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1/2 cup coconut flour
- 8 tablespoons Earth Balance Butter (vegan)

Preparation

Preheat the oven to 400 degrees.

Grease and line the bottom of a 711 inch baking dish with parchment paper.

Cut butter into small cubes.

Bring a small saucepan of water to a boil and then turn it down to a simmer.

Place the butter and chocolate chips in a metal bowl and place over the saucepan.

Stir continually until completely melted and set aside.

Combine the sugar and eggs.

Stir until well combined.

Stir in the vanilla, salt, and flour.

Next, stir in the chocolate mixture.

Pour the batter into the baking dish and smooth top with the back of a spatula or spoon.

Bake for 20 minutes, or until a toothpick inserted in the middle of brownies comes out clean.

While the brownies are baking, fill the sink with 1 inch of ice water.

As soon as the brownies come out of the oven, place them in the bath to let cool completely.

Be careful not to splash water on them!

Zucchini & Basil Frittata

Ingredients
- 12 leaves basil, chopped
- 1/2 cup cheddar cheese
- 3 eggs
- 1 tablespoon grapeseed oil
- 4 green onions
- 3/4 teaspoon salt
- 400g zucchini, grated

Preparation

Shred the zucchini with a box grater or a food processor.

Place shredded zucchini in a colander with a large bowl underneath.

Sprinkle with a little salt and allow some water to seep out of the zucchini, about 20 minutes. You can squeeze some of the water out with your hands if you're in a hurry. This part can be completed ahead of time and the shredded zucchini can stay in your refrigerator overnight if you would like to do this recipe in stages.

In a large mixing bowl, add shredded zucchini, green onion, basil, cheddar cheese, and salt. Stir to combine. Crack the eggs in a separate bowl and beat them.

Pour the egg mixture into the bowl with the veggies and stir to combine all ingredients. Preheat your oven to 350F. In a 10 inch cast iron skillet, heat 1 to 2 tablespoons grapeseed oil (or olive oil).

Spread the oil around, making sure the sides are nicely oiled as well.

Heat to medium then add the egg/zucchini mixture, and make sure the mixture is evenly distributed. Cook until the egg begins to cook to the sides of the skillet, about 3 to 5 minutes. Use a pot holder to place the skillet in the oven.

Bake for 12 to 15 minutes until the center tests clean.

Braised Carrots

Ingredients
- 1/2 cup apple, juice
- 3 carrot, chopped, (rolling cut is nice)
- 1 fresh sprig rosemary, chopped or 1/2 tsp dried rosemary
- 2 cloves garlic, bruised
- 1 zest of 1 lemon
- 2 tablespoons olive oil
- 1 onion, chopped

Preparation

Heat the oil in a frypan over high heat.

Add the garlic and onion and cook for 2 minutes.

Add the carrots, rosemary and lemon zest and cook for 2 minutes more.

Add the apple juice and cook for 3 more minutes, until almost all of the liquid has evaporated.

Mushroom & Sundried Tomato Pasta

Ingredients
- 4 cloves garlic, minced
- 1/2 cup finely chopped onion
- 1 inch can anchovy filets (flat filets oil are best)
- 10 large white mushrooms, chopped
- 8 inches jarred sun dried tomatoes olive oil, cut into thin strips
- 3 tablespoons olive oil
- 2 teaspoons red pepper flakes
- 1 teaspoon dried basil (tbsp. or 2 of chopped fresh would be even better)
- salt and pepper to taste
- fresh grated parmesan cheese

Preparation

Heat 2 tbsp. of the olive oil in a saucepan over medium-high heat.

Add the onion and sauté for 1 minute, until slightly tender.

Add garlic and red pepper flakes, sauté one minute longer.

Stir in the anchovy filets, and half the cans oil, and mash everything in the pan until it is a slightly chunky paste.

Add the mushrooms and herbs, toss, cover and lower the heat.

Cook until the mushrooms release their liquid which will give the sauce a lovely flavor.

Remove lid, stir, add the 1 remaining tbsp. of olive oil or the rest of the anchovy oil to thin slightly.

Remove the pan from heat, and add sun dried tomato strips, salt and pepper.

Pour over hot pasta, top with copious amounts of parmesan cheese.

Perfect appetizer a huge win for special dinner celebrations! 🍊🦪🥗

Citrus Arugula Salad With Seared Scallops

Ingredients
- 2 cups arugula
- 1 cara cara orange
- 2 radish, thinly sliced
- 1/2 persian cucumber (or English cucumber), thinly sliced
- 1 green onion, chopped
- salt, to taste
- 8 scallops

Preparation

Thinly slice the radishes and cucumber; and, dice the green onion.

In a bowl, squeeze half of the Cara Cara orange and pulp, add salt and whisk together.

Add in the radish and cucumber slices, arugula and toss together.

For the scallops: heat oil in a high heat.

Place the scallops flat-side down in the hot pan. Don't overcrowd the pan, or the pan won't stay hot enough to give the scallops a good sear. If you have a lot of scallops, it's better to work in batches.

Once you've placed the scallops in the pan, don't touch them.

If you give in to the temptation to move the scallops around the pan, all you'll be doing is preventing them from forming the nice brown crust that you want.

Because of variations in scallop thickness, pan temperatures and so on, it's not easy to pinpoint an exact cooking time. But after a couple of minutes, it's OK to peek underneath. If you see a nice, caramel-colored crust on the underside, they're ready to flip.

Plate salad and place 4 scallops on top. Scallops start to turn rubbery if you wait too long to serve them, so get them on the plate right away and be sure to serve them with the beautiful caramel-colored crust facing up.

Blushing Pink Bowtie Salad

Ingredients
- baby spinach leaves - stems removed, washed, and torn
- 8 ounces mini-bowtie pasta
- 1 cup canola oil
- 8 strips of bacon, cooked and crumbled
- 1 teaspoon dry mustard
- mozzarella cheese (julienne into 1-inch strips)
- 1 tablespoon to 1-½ poppy seeds
- inch romaine lettuce, cleaned and cut bite size pieces
- fresh strawberries, cut into bite-size chunks
- 2/3 cup sugar
- 2 tablespoons sweet onion (Vidalia or Maui)
- cup red wine vinegar

Preparation

Combine dressing ingredients (except poppy seeds) in a blender jar. Give it enough time to completely pulverize the onion and turn a pretty pink color.

Remove to a separate container.

Add poppy seed just before serving, stirring well.

Combine lettuce, spinach, and pasta, tossing until combined.

Add just enough dressing to coat.

Add strawberries, bacon and mozzarella last, stirring carefully to prevent breaking them apart.

Serve with additional dressing on the side. Store remains in the refrigerator.

Temptations in its finest, can't get enough with this tasty dish! 🐔🍲🍾

Chicken Ragu W Rigatoni

Ingredients
- 1 lb rigatoni (or other short cut pasta)
- 3 tbsp olive oil
- 1 1/2 lb. boneless chicken breasts (or thighs), chopped into small bite-sized pieces
- 1 medium onion, chopped
- 1 carrot, peeled and grated
- 4, 5 pieces Baby Bella mushrooms, sliced
- 1, 2 bay leaf
- 1 tsp dried oregano
- 2 garlic cloves, finely chopped
- 1/2 tsp black pepper
- 1/4 cup Marsala
- 1/2 cup white wine
- 1 28 oz. jar spaghetti sauce
- 1 26 oz. diced tomatoes
- 1/2 cup fresh Parmesan cheese, grated (mandatory!)
- a handful of fresh basil leaves, torn

Preparation

In a large skillet or non-stick pan, heat 1 tbsp olive oil over medium high heat and brown the chicken pieces on all sides.

Cook until lightly browned and any pink spots are removed.

Meanwhile, cut the vegetables into desired pieces or use a grater for smaller sizes.

Lower the heat and add the basil, onions, carrots, mushrooms, garlic and cook, stirring frequently, until the veggies are softened, about 10 minutes.

Stir in the bay leaves, tomato sauce, tomato paste, Marsala, white wine, and herbs. Semi-cover with lid and cook on low with a slight bubble for about 30 minutes to infuse all ingredients.

Sample the sauce and add salt and pepper according to taste.

Discard bay leaves before combining with chicken pieces.

Cook the rigatoni according to package directions, but don't forget to add salt to the boiling water.

In addition, do not rinse under cold water; drain in the colander hot and set aside.

After rigatoni pasta and sauce are finished, combine the two and plate.

Grate plenty of fresh parmesan cheese and garnish with extra basil leaves. Enjoy!

A main dish salad with lots of delicious strong flavors! 🌿🌶️🥗

Basil Tagliatelle With Roasted Red Bell Pepper Salad

Ingredients
- 200g (7 oz) whole wheat basil tagliatelle
-6 red bell peppers, medium-sized
-4 garlic cloves, minced
-4 Tbsps chopped parsley
-4 Tbsps grated horseradish
-2 scallions, chopped
-4 Tbsps lemon juice
-3 Tbsps extra virgin olive oil
-sea salt and pepper, to taste

Preparation

Roast the red bell peppers. After they're ready, peel them and cut them in thin, long strips.

In a large bowl mix the pepper strips with all other ingredients except pasta.

Add water in a large pot and let it boil. When it has reached boiling point add the pasta. Check the info on the pasta package to see how many minutes it has to boil.

Mix everything together. Serve!

Lemon Thyme Chicken

Ingredients
- 4 tablespoons olive oil
- 4 chicken pieces
- 1 handful thyme sprigs, plus extra for garnish
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- salt, to taste
- 2 cloves garlic, peeled and sliced
- 1 lemon, sliced

Preparation

Preheat the oven to 350 F (180 C).

Place the olive oil and chicken pieces into a large bowl.

Add the thyme sprigs (run your fingers along the stalks to remove the leaves) and the lemon juice, zest, and salt.

Use clean hands to mix everything well, massaging the flavors into the chicken.

Place a pan over high heat and when hot, place the chicken pieces into the hot pan skin-side down.

Cook until the skin is crispy, then use tongs to turn the chicken over, cooking the underside for 1 more minute.

Remove the pan from the heat and add the garlic and lemon slices to the pan, coating everything in the rendered fat and juice.

Place everything (chicken skin-side up) into an oven-proof dish and place in the oven for 20-25 minutes or until the chicken has cooked through.

Serve garnished with a scattering of fresh thyme leaves and serve with any side dishes of your choice and season with more salt, if needed.

Chocolate Quark Cake

Ingredients
- 1/2 teaspoon baking powder
- 2 ounces bittersweet chocolate, coarsely chopped
- 3/4 cup (1 ½ sticks) butter, slightly softened, cut into tablespoons
- 1 1/4 cups (2 ½ sticks) butter, softened
- 1 3/4 cups cake flour
- 1/2 cup unsweetened black cocoa powder,
- 5 large eggs, separated
- 6 tablespoons all-purpose flour
- 1 1/4 cups heavy cream
- 1 teaspoon instant espresso
- 1/2 teaspoon Instant espresso powder
- 1 cup quark
- 1/4 teaspoon salt
- 1 2/3 cups sugar
- 2 1/2 cups sugar
- 2 oz unsweetened chocolate, coarsely chopped
- 6 1/2 ounces unsweetened chocolate, finely chopped
- 1 tablespoon vanilla extract
- 1 1/2 teaspoons vanilla extract
- 1/2 cup boiling water
- 1 whole egg

Preparation

To make the frosting: In a medium-size pan, heat the cream and sugar. Stir until the sugar has dissolved.

Add the chocolate & espresso powder and stir until it is thoroughly melted.

Remove from the heat, cover, and let cool for about 10 minutes or at least to room temperature.

Using a mixer, mix the butter on medium-high speed until it is smooth and creamy.

Turn the mixer to medium-low and add half of the chocolate mixture along with the vanilla.

Mix well.

Add the remaining chocolate mixture and mix until smooth and creamy. Set aside until it hardens slightly, to become a spreadable consistency, 1 to 2 hours or you can refrigerate the frosting for about 30 minutes, or until it becomes thickened and spreadable.

Bring it to room temperature before frosting.

To make the cake, preheat the oven to 350F degrees.

Generously grease three 9-inch round cake pans.

Cut a piece of waxed paper to fit the bottom of each pan and place inside the pans.

Grease the waxed paper, and dust the pans with cocoa powder until well coated. Set aside.

In a small heatproof bowl, pour the boiling water over the 1/2 cup cocoa. Stir until the mixture is very smooth, and set aside to cool.

Melt the chocolate in a double boiler. Stir occasionally until smooth.

Remove from the heat.

Into a medium-size bowl, sift together both flours, the baking powder, and salt. Set aside.

In a bowl, beat the butter until smooth and creamy, (about 5 minutes).

Add 2 1/4 cups of the sugar and beat until well blended, (about 5 minutes). Beat in the whole egg and egg yolks, one at a time. Beat in the cooled cocoa mixture until very smooth, scraping down the sides as you go.

Turn the mixer to medium-low and add the melted chocolate, beating until well incorporated.

Add the vanilla. Turn the mixer to low and add half the dry ingredients. Then add the quark, mix well, and add the rest of the dry ingredients. Beat until smooth and creamy, 2 to 3 minutes.

In a bowl, using clean beaters, beat the egg whites at high speed. When frothy, add the remaining 1/4 cup sugar and continue beating until the egg whites form stiff peaks, 5 to 6 minutes.

Using a large rubber spatula, fold about 1 cup of the chocolate mixture into the egg whites. Then gently fold that mixture back into the chocolate mixture, just until the egg whites are well incorporated. Do not overmix.

Distribute the batter evenly among the pans, and bake in the center of the oven for 20 to 25 minutes.

Do not overbake.

Cakes are done when the tops are just beginning to crack and a toothpick inserted into the center comes out with a few crumbs clinging to it.

Let cool on a rack for about 15 minutes.
