This is the first pretty egg I've gotten since our coop burned in March. 🤎

But what makes it even more special is that this is also the first pretty egg from chickens I've hatched from the chickens we lost.

Will the inside look any different than a regular egg?

Nope.

It will still have the same yolk and the same egg white.

It will cook the same.

It will taste the same.

But that doesn't make this little speckled egg any less exciting to me. 😂

Because sometimes it's not about what something does.

Sometimes it's about what it represents.

After losing our coop, starting over, rebuilding, and now seeing the chickens I've hatched myself begin to lay... this little egg feels like a reminder that life keeps moving forward.

Sometimes, little by little, you get pieces of what you lost back again.

And sometimes you get something new and beautiful that you didn't have before.

Today, apparently, mine came in the form of a little speckled egg. 🤎🐔🥚

Take the picture.

Because one day, it may be all you have.

My momma passed away eight years ago, and some days it feels like yesterday... while other days, it feels like a hundred years ago.

I miss her smile.

I miss her laugh.

I miss her strength.

I miss her courage.

But most of all... I miss her with our boys.

I still pick up my phone and think about calling her.

I still think, “Oh, I'll just ask Mom.”

And then I remember that I can't.

I know she would be proud of the man of Christ my husband is.

Of the life we've built and the life we are still building.

I know she'd be proud of the woman I'm becoming.

I know she would be proud of our boys and their love of God.

And I know she would be right in the middle of the chaos with us... laughing, loving, and probably telling me something I didn't want to hear. 🤎

But knowing those things doesn't take away the hurt.

Even though the hurt has dulled over the years, grief is funny that way.

It can sneak up on you in the smallest moments.

A thought.

A memory.

A question you wish you could ask.

And suddenly, you're missing them all over again.

So take the picture.

Get in the picture.

Be present.

Don't always worry about what you look like or whether the house is clean or whether your hair is done.

One day, someone may look back at that picture and be thankful that you're in it.

But above all...

Make sure the people you love know Christ.

Tell them about the hope you have.

Tell them about the sacrifice He made.

Because pictures are precious.

Memories are precious.

But the hope we have in Christ is eternal.

And that is something worth sharing while we still have the time. 🤎

🍮 HOMEMADE PUDDING MIX 🍮

My homemade pancake mix did so well that I decided it was time to add another simple mix to the pantry!

And this one is just as easy.

Instead of buying boxes of pudding mix, you can make a big batch ahead of time using a few simple pantry ingredients. Then when you want homemade pudding, just scoop out what you need and add your milk and flavoring.

Simple. Homemade. And one less thing you have to buy from the store. 🤎

🍮 HOMEMADE DRY PUDDING MIX

Ingredients:

• 2 cups granulated sugar
• 1 cup all-purpose flour
• 1 teaspoon salt

Add everything to a large bowl or jar and whisk or shake very well until completely combined.

Store in an airtight container in your pantry.

To Make Vanilla Pudding:

• ½ cup dry pudding mix
• 2 cups milk
• 1 egg yolk, optional for a richer pudding
• 1 tablespoon butter
• 1 teaspoon vanilla extract

1. Add the pudding mix and milk to a saucepan and whisk until completely smooth.

2. Whisk in the egg yolk, if using.

3. Cook over medium heat, stirring constantly, until the pudding thickens and begins to bubble.

4. Once bubbling, continue cooking for 2–3 minutes to make sure the flour is fully cooked.

5. Remove from the heat and stir in the butter and vanilla.

6. Serve warm or refrigerate until chilled.

🍫 HOMEMADE FUDGESICLES 🍫

If you love chocolate pudding, wait until you freeze it.

These homemade fudgesicles are rich, creamy, chocolatey, and made with simple ingredients you probably already have in your kitchen.

No boxed pudding mix and no cornstarch needed! Just a simple old-fashioned, flour-thickened chocolate pudding turned into the perfect frozen treat. 🤎

🍫 HOMEMADE FUDGESICLES

Ingredients:

• 2 cups milk
• ½ cup granulated sugar
• ¼ cup unsweetened cocoa powder
• 3 tablespoons all-purpose flour
• ¼ teaspoon salt
• 2 tablespoons butter
• 1 teaspoon vanilla extract

Directions:

1. In a saucepan, whisk together the sugar, cocoa powder, flour, and salt.

2. Slowly whisk in the milk until completely smooth.

3. Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble.

4. Once bubbling, continue cooking for 2–3 minutes, stirring constantly, to make sure the flour is fully cooked.

5. Remove from the heat and stir in the butter and vanilla until smooth.

6. Allow the mixture to cool for about 15–20 minutes, stirring occasionally.

7. Pour into popsicle molds.

8. Freeze for at least 6 hours or overnight.

To remove, run the outside of the mold under warm water for a few seconds.

And that's it! Basically frozen chocolate pudding on a stick. 😂🍫🤎

There will be times in your life when something, or a lot of things, don't go as you planned or hoped for...

For example, I mixed these loaves up and sat them aside to rise.

The only problem was, I forgot about the dough and got busy doing something else. By the time I remembered, the dough had over-risen.

This doesn't mean that the bread is ruined, but it definitely changes the outcome a bit, as you can tell.

I went ahead and rolled out the dough, shaped it into my pans, and baked it anyway. But these loaves are small in comparison to what they normally look like.

They have the same flavor and are still perfect to eat, but they just look different.

And that's okay.

It kind of reminds me of how our walk with Jesus is...

We all have this grand plan for how a situation should go or how our lives should look.

We make plans.

We have expectations.

We picture exactly how things are supposed to turn out.

And then life happens.

Things don't go according to our plan.

Things take longer than we thought they would.

Sometimes things happen that completely change the outcome we were expecting.

And we're left looking at what remains and wondering why it doesn't look like what we had pictured.

But just because it doesn't look the way we expected doesn't mean it's ruined.

Just because our story takes a turn we didn't plan for doesn't mean God has stopped working.

Sometimes the outcome simply looks different than what we imagined.

And that's okay.

Because thankfully, we don't serve a God who is limited by our plans.

His plans are greater than ours.

His timing is better than ours.

And even when we can't understand why something happened or why our lives don't look the way we thought they would, we can trust that He is still working.

So maybe today, if something in your life doesn't look the way you hoped it would...

Remember that different doesn't mean ruined.

Your story isn't over.

And God is still writing it. 🤎

🍎 If you think apples are boring… you've never had them like THIS. 👀🤤

Tender, cinnamon-spiced apples wrapped in homemade pastry and baked in a sweet cinnamon sauce.

And that sauce? 🤤 Let's just say you are going to want plenty of it spooned over the top.

These are the kind of old-fashioned desserts that make the whole house smell amazing and remind me why some recipes never go out of style. 🤎

🍎 OLD-FASHIONED DICED APPLE DUMPLINGS

Makes about 8 dumplings

🍏 APPLE FILLING

• 5–6 medium apples, peeled, cored, and diced
• ½ cup brown sugar
• ¼ cup granulated sugar
• 1½ teaspoons cinnamon
• ¼ teaspoon nutmeg, optional
• 2 tablespoons all-purpose flour
• 1 teaspoon vanilla

🥧 HOMEMADE DOUGH

• 2½ cups all-purpose flour
• 1 teaspoon salt
• 1 cup cold lard
• ½–¾ cup cold water

🤎 CINNAMON SAUCE

• 1½ cups granulated sugar
• 1½ cups water
• 1 teaspoon cinnamon
• Pinch of salt
• 1 teaspoon vanilla

DIRECTIONS

1. Preheat your oven to 375°F and grease a 9x13-inch baking dish.

2. In a large bowl, combine the peeled and diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, flour, and vanilla. Stir until the apples are evenly coated.

3. To make the dough, combine the flour and salt. Cut in the cold lard until the mixture resembles coarse crumbs.

4. Slowly add the cold water, mixing just until the dough comes together. Don't overwork it.

5. Divide the dough into 8 equal pieces.

6. Roll each piece into a circle about 7–8 inches wide.

7. Place a generous scoop of the diced apple filling in the center of each circle.

8. Fold the dough up around the apples and pinch the edges together to seal. Place the dumplings seam-side down in the prepared baking dish.

9. For the cinnamon sauce, combine the sugar, water, cinnamon, and salt in a saucepan. Bring to a simmer just until the sugar dissolves. Remove from the heat and stir in the vanilla.

10. Carefully pour the sauce around and partially over the dumplings.

11. Bake for 45–55 minutes, or until the dumplings are golden brown and the apples are tender.

12. Spoon that warm cinnamon sauce over the dumplings before serving.

This dough is frozen. ❄️🍞

And that's one of the things I love most about this homemade bread dough!

After the first rise, I can freeze it and pull it out whenever I'm ready to make something homemade.

Once thawed, it comes back beautifully and bakes up perfectly!

And the best part?

This ONE dough can be used for so many different things.

🍞 Regular homemade bread
🍥 Cinnamon rolls
🧄 Garlic knots
🧀 Jalapeño cheddar bread
🥖 Dinner rolls
🥨 Breadsticks

And honestly... probably anything else you can dream up. 😂

You don't need a different dough recipe for every single thing you want to make.

Find one good dough, learn how to work with it, and let it do the work for you!

Make extra, let it go through the first rise, freeze it, and then pull it out when you want fresh homemade bread without starting completely from scratch.

I know I complain a lot about the heat, but I'm seriously DONE.

It's bad when the dogs don't even want to be outside for more than five minutes!

I am SO ready for winter!

Heck, at this point, I'd even take fall. 🍂

We need rain in a BAD way, and this heat is just sucking the ground dry, dry, dry.

And then I look at this forecast... 🫠

Bring on the cold weather.
Bring on the hoodies.
Bring on the boots.
Bring on the soups and chili.
Bring on the frost.
Bring on the snow. ❄️

Psst... Id even take some ice at this point... 🤫

I am a winter girl through and through, and I am more than ready to trade this sweating-before-6-AM weather for cold mornings and a cozy house.

Now if we could just get some rain first... 🌧️🙏

🍬 HOMEMADE TOFFEE 🍬

There is something so satisfying about making candy from scratch.

This homemade toffee is buttery, crunchy, and absolutely delicious on its own—or you can add chocolate on top if you want to take it a step further. 🤎

🍬 HOMEMADE TOFFEE

Ingredients:

• 1 cup butter
• ¾ cup granulated sugar
• ¼ cup brown sugar
• 1 teaspoon vanilla extract
• ¼ teaspoon salt
• Chocolate chips, optional
• Chopped nuts or flaky salt, optional

Directions:

1. Line a baking sheet or pan with parchment paper and set aside.

2. Add the butter, granulated sugar, and brown sugar to a heavy-bottomed saucepan.

3. Cook over medium heat, stirring constantly, until everything is melted and combined.

4. Continue cooking and stirring until the mixture reaches 300°F on a candy thermometer.

If you don't have a candy thermometer, here's another way to check it: Keep a bowl of ice water nearby. Once the toffee reaches a deep amber color, drop a small amount into the ice water. If it hardens and breaks easily, your toffee is ready.

5. Remove the toffee from the heat and stir in the vanilla and salt.

6. Immediately pour the hot toffee onto your prepared parchment paper and spread it out.

7. If using chocolate, sprinkle chocolate chips over the hot toffee. Let them sit for a few minutes until softened, then spread the melted chocolate over the top.

8. Add chopped nuts or a little flaky salt if desired.

9. Allow the toffee to cool completely and harden before breaking it into pieces.

Simple, buttery, homemade toffee without needing anything fancy. 🤎
