Raspberry white chocolate smoothie bowl anyone? This was supposed to be the cover photo for my Reel withe the recipe two posts back but somehow with all my edit attempts and changes before I posted I ended up leaving the cover photo off😂. So it has a photo of my finger for the cover🤷‍♀️. I’ll get it together on Reels the next time maybe.... Until then, check out the Reel 2 pics back in my profile for the full recipe! I have a new recipe posted for low carb blueberry muffins!

Ingredients:
2½ cups almond flour
⅓ cup Swerve or your favorite low carb sweetener
1 tsp baking powder
½ tsp baking soda
½ tsp sea salt
⅓ cup oil
⅓ cup your favorite unsweetened milk or water (I used coconut milk)
3 large eggs
1 tsp vanilla
½ cup fresh blueberries

Instructions:
Preheat the oven to 350’ F.
Line a 12 cup muffin pan with paper liners.
In a large bowl blend together the almond flour, Swerve, baking powder, baking soda, salt, oil, milk eggs, and vanilla until combined.
Gently fold in the blueberries and scoop an equal amount of batter into each liner.
Bake at 350’F for about 18 to 20 minutes.
Let the muffins cool before serving. These can be stored for a couple days in the fridge or a couple months in the freezer. Enjoy!

I can’t believe it’s almost berry season here in Ohio! We have an easy lower-ish carb white chocolate covered berries recipe on the blog ( link in profile)! I made them with strawberries AND with raspberries. Not sure yet which is my favorite. To me berry season always means warmer weather and the beginning of summer!

Honestly these are super easy to make with white chocolate. Basically melt the chocolate and dip, let cool and enjoy!

I’ve been obsessing over kale chips lately! They’re so easy to make and so much more tasty than the prepackaged ones! I have several recipes for the oven or for the dehydrator (my favorite). Here is one of the recipes, if you’d like more head to the link in my bio and search kale chips.

1 bunch kale, rinsed and torn into “chip” sized pieces.
2 cups raw cashews, soaked in water for about 4 hours
1 large, or 2 medium red or yellow peppers, chopped
1 clove garlic
2-3 tablespoons Kal Nutritional Yeast Flakes~ optional~ but it adds a cheesy flavor
Juice of one lemon
Pinch of sea salt
Directions:
1. Put the cashews, peppers, garlic, nutritional yeast, and lemon in a food processor and process until smooth. You may have to add a little water if the mixture is too dry and won’t process. Let it process for a minute or two, and add water as needed until you have a thick paste consistency.

2. Put the rinsed and torn kale into a large bowl, and pour the cashew mixture over the top. Mix it all together with your hands until all of the chips are coated. Sorry, I didn’t say this was a neat and tidy recipe! You’ve got to get your hands a little messy here!

3. Place the coated kale cips in a single layer on mesh dehydrator screens.

4. Dehydrate at 120-125`F for about 8-12 hours, depending on the humidity level in your area. Remove the chips when they’re crispy.

It’s a healthier way to satisfy that need to crunch! Enjoy!
