Ingredients:
- 3 cups Rice Krispies cereal
- 1/2 cup creamy peanut butter
- 1/2 cup honey or corn syrup
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 2 tablespoons peanut butter
- Optional: extra mini chocolate chips for topping
Directions:
1. In a saucepan over medium heat, combine honey (or corn syrup) and brown sugar. Stir until the sugar has dissolved and the mixture starts to bubble.
2. Remove from heat and stir in creamy peanut butter and vanilla extract until smooth.
3. Add the Rice Krispies cereal and mix until all the cereal is fully coated.
4. Press the mixture into a greased or lined mini muffin tin, filling each cup and pressing down gently with a spoon.
5. In a microwave-safe bowl, melt the semisweet chocolate chips and peanut butter in 30-second intervals, stirring in between until smooth.
6. Spoon the melted chocolate over each cup and smooth out the tops.
7. If desired, sprinkle extra mini chocolate chips on top.
8. Chill in the refrigerator for at least 30 minutes until set. Once set, remove from the tins and store in an airtight container.
Prep Time: 15 minutes.
Chilling Time: 30 minutes.
Total Time: 45 minutes.
Servings: 12 cups.
