It’s officially green chile season in Colorado! 🌶️💚

When I moved to Colorado in 1998, I had no idea what people meant by “Colorado green chile.” And smothering a burrito in chile? I was VERY confused. 😂

Fast-forward all these years, and I get it now! This Colorado-Style Pork Green Chile was adapted from my cousin’s husband Augi, who is from Pueblo, and one Colorado reader says the recipe is “spot on.” ⭐⭐⭐⭐⭐
