Happy National Coconut Day! 🥥🌴🍹

If you’re looking for a fun summer cocktail, this Tropical Coconut Margarita is one of my new favorites! It’s creamy, refreshing, and full of tropical flavor, making it perfect for pool days, backyard barbecues, and Fourth of July celebrations.

🍹 Recipe:
• 2 oz tequila
• 1 oz coconut rum
• 2 oz pineapple juice
• 2 oz limeade
• 1 oz cream of coconut

Shake with plenty of ice and pour over fresh ice. If you’d like, rim your glass with salt, sugar, or toasted coconut for an extra tropical touch.

I recently picked up chicken salad from Buc-ee's and knew I wanted to recreate it at home!

This version is packed with shredded chicken, crunchy celery, green onions, chopped pecans, and just enough dried cranberries for a little sweetness. Everything gets tossed in a simple creamy dressing and chilled until the flavors come together.

It's perfect for lunches, meal prep, summer gatherings, or served with crackers for an easy snack.

Recipe:

• 3 cups cooked chicken, shredded
• 2 celery stalks, diced
• 2 green onions, sliced
• ½ cup chopped pecans
• ⅓ cup dried cranberries

Dressing:
• ½ cup mayonnaise
• 1 tsp garlic powder
• Salt and pepper to taste

Mix everything together and chill for at least 1 hour before serving.

🎃 Halloween Trend Predictions for 2026 👻

I know it’s only June, but if you’re anything like me, you’re already thinking about Halloween decor. 😅

After looking at what’s trending and what shoppers seem to be loving, here are my predictions for Halloween 2026:

💗 Pink Halloween
👻 Pastel Ghosts
✨ Disco Halloween

We’re seeing less scary and more playful, colorful Halloween decor. Think cute ghosts, pink checkerboards, disco spiders, bows, pastel colors, and collections built around a complete aesthetic rather than traditional orange and black.

My prediction? Cute and colorful Halloween decor is going to be one of the biggest trends of 2026.

🍰 Father’s Day Dessert Idea 🍰

If you’re still deciding what to make for Father’s Day, this brownie bottom cheesecake is always a winner.

It starts with a rich homemade brownie layer, topped with creamy cheesecake, and finished with caramel sauce and toasted pecans. Every bite is the perfect combination of chocolate, cheesecake, caramel, and crunch.

✨ Brownie Bottom Cheesecake ✨

Brownie Layer:
• ½ cup butter, melted
• 1 cup sugar
• 2 eggs
• 1 tsp vanilla
• ⅓ cup cocoa powder
• ½ cup flour
• ¼ tsp salt

1. Heat oven to 325°F.
2. Grease a 9-inch springform pan.
3. Mix melted butter and sugar.
4. Add eggs and vanilla.
5. Stir in cocoa powder, flour, and salt.
6. Spread into pan.
7. Bake 15 minutes and cool.

Cheesecake Layer:
• 16 oz cream cheese, softened
• ½ cup sugar
• 2 eggs
• 1 tsp vanilla
• ¼ cup sour cream

1. Beat cream cheese until smooth.
2. Mix in sugar and vanilla.
3. Add eggs one at a time.
4. Mix in sour cream.
5. Pour over brownie layer.

Bake:
• 325°F for 35-45 minutes
• Center should still jiggle slightly

Cool:
• 1 hour on the counter
• Refrigerate 3-4 hours or overnight

Top with caramel sauce and toasted pecans before serving.

I've really been loving the H-E-B cranberry turkey salad lately, so I decided to make my own version at home! 🍗✨

I swapped the turkey for chicken, used fewer cranberries, and added crunchy pecans and green onions. It turned out creamy, crunchy, slightly sweet, and absolutely delicious. My favorite way to eat it is with jalapeño saltines, but it would also be amazing on a croissant or sandwich.

🍗 Cranberry Chicken Salad Recipe

Ingredients:
• 3 cups cooked chicken
• ½ cup diced celery
• 2 green onions, sliced
• ½ cup chopped pecans
• ¼ cup dried cranberries

Dressing:
• ¾ cup mayonnaise
• 1 tbsp honey
• 1½ tsp apple cider vinegar
• ¼ tsp garlic powder
• ½ tsp salt
• ¼ tsp black pepper

Directions:
Mix all ingredients together until well combined. Cover and refrigerate for at least 1 hour before serving. Enjoy with crackers, on a croissant, or over a bed of lettuce.
