πHeavenly Pistachio Raspberry Dream Cake πΏβ¨
A show-stopping dessert that melts in your mouth. Delicate pistachio cake, layered with vibrant raspberry compote and wrapped in a silky cream cheese frostingβfinished with a mirror glaze thatβs pure magic. This is not just cake... itβs a dream on a plate! π°π
Ingredients:
For the Pistachio Cake Layers:
1 cup shelled pistachios, finely ground
1 cup all-purpose flour
1 tsp baking powder
ΒΌ tsp salt
4 large eggs, room temperature
1 cup granulated sugar
Β½ tsp vanilla extract
Β½ cup unsalted butter, melted and cooled π§
For the Raspberry Filling:
2 cups fresh raspberries π
Β½ cup granulated sugar
2 tbsp lemon juice π
2 tsp gelatin powder
For the Cream Cheese Frosting:
1 lb cream cheese, softened
Β½ cup unsalted butter, softened
3 cups powdered sugar, sifted
2 tsp vanilla extract
For the Mirror Glaze (Optional):
ΒΎ cup granulated sugar
Β½ cup water
1 tbsp gelatin powder
Β½ cup condensed milk
1 cup white chocolate chips
Green food coloring
Instructions:
Bake the Pistachio Cake Layers:
Preheat oven to 350Β°F (175Β°C). Grease and line two 8-inch round cake pans.
In a bowl, mix pistachios, flour, baking powder, and salt.
In a separate bowl, beat eggs and sugar until pale and fluffy (about 5 minutes). Fold in vanilla and melted butter. Gradually mix in dry ingredients.
Divide batter between pans and bake for 25β28 minutes, or until a toothpick comes out clean. Let cool completely. π (35 minutes total)
Prepare the Raspberry Filling:
In a saucepan, combine raspberries, sugar, and lemon juice. Simmer over medium heat for 10β12 minutes until thickened.
Sprinkle gelatin over 2 tbsp water, let bloom for 5 minutes, then stir into hot raspberry mixture until dissolved. Cool completely. π (20 minutes)
Make the Cream Cheese Frosting:
Beat cream cheese and butter together until smooth. Add powdered sugar gradually, beating until fluffy. Mix in vanilla. π§ (10 minutes)
Assemble the Cake:
Place one cake layer on a stand. Spread a generous layer of raspberry filling, then a layer of frosting. Top with second cake layer. Frost entire cake with cream cheese frosting. Chill for 30 minutes. βοΈ (40 minutes total)
Optional Mirror Glaze Finish:
In a pot, bring sugar and water to a boil. Remove from heat. Stir in gelatin (bloomed in 3 tbsp cold water), condensed milk, and white chocolate. Stir until melted. Add green food coloring. Cool to 95Β°F (35Β°C) and pour over chilled cake for a glossy finish. π (25 minutes)
Final Touch:
