Spicy Aachari Sourdough Bread Recipe | Indian Fusion Pullman Loaf
What happens when homemade sourdough meets spicy Indian achar? 🌶️🍞 You get this Indian-style Aachari Sourdough—super soft sandwich bread with bold, tangy pickle flavor in every bite!
Ingredients:
* 350g Bread Flour
* 263g Water (75%)
* 90g Active Starter
* 7g Salt (2%)
* 15g Achar Masala
* 10g Oil
Quick Steps:
1. Mix dough and complete bulk fermentation.
2. Mix achar masala with oil, spread over stretched dough, and fold into a log.
3. Place in Pullman pan, rest at room temp for 2 hours, then cold ferment in the fridge overnight.
4. Bake at 425°F (218°C) until golden brown.

* Sauces: Soy Sauce, Green Chili Sauce, Red Chili Sauce
* Spices: Salt, Black Pepper, Curry Powder
* Garnish: Fresh Coriander, Spring Onions
METHOD:
1. Heat oil in a hot wok.
2. Sauté chopped ginger, garlic, and green chillies until fragrant.
3. Add onions, cabbage, and green bell peppers. Stir-fry on high heat to keep them crisp.
4. Toss in your boiled noodles.
5. Add soy sauce, green chili sauce, and red chili sauce. Mix well.
6. Season with salt, black pepper, and curry powder. Stir-fry for 1 minute until well coated.
7. Garnish with fresh coriander and spring onions. Serve hot!

Dubai chocolate meets sourdough — and somehow, it works. 😮‍💨🍫🍞
Pistachio cream, dark chocolate, and buttery kataifi folded into a slow-fermented sourdough loaf. The crust crackles like glass. The inside is molten, nutty, ridiculous.
I’m not saying this is the best thing I’ve ever baked. But I’m also not NOT saying that.

🔬 NEXT-LEVEL 80% HYDRATION SOURDOUGH FOCACCIA 🥖✨
If you’re chasing those giant, jiggly dough bubbles and an ultra-crisp, parmesan-crusted crunch... save this post right now. We are pushing this dough to 80% hydration with a 12-hour slow pan-proof to maximize flavor and texture! 🤯👇
🛒 THE FORMULA
🌾 500g Bread Flour (100%)
💧 400g Water (80%)
🌀 100g Active Sourdough Starter (20%)
🧂 12g Fine Sea Salt (2.4%)
🧄 Toppings: Olive oil, minced garlic, garlic powder, fresh rosemary, & plenty of grated Parmesan cheese 🧀
🥣 THE LAB METHOD
1️⃣ THE MIX & SALT TIMING: Whisk your active starter into the water, then mix in the flour until shaggy. Sprinkle the salt on top and use wet hands to squeeze and work it completely into the dough.
2️⃣ STRETCH & FOLD: Give it your first set of stretches and folds to build strength. Drizzle olive oil over the top, then perform 2 more sets of folds over the next hour.
3️⃣ WARM BULK: Cover and let it ferment for 4 hours at room temp until puffy and alive.
4️⃣ THE 12-HOUR PAN PROOF: Generously oil your baking pan (bottom AND side walls!). Let the dough slide in. Cover and let it proof on the counter for 12 hours for deep flavor development and maximum bubble formation.
5️⃣ THE DIMPLE & FLAVOR BOMB: Oil your fingers, dive straight down to the bottom of the pan to create those iconic pockets 🫧 Top with fresh rosemary, minced garlic, garlic powder, and a heavy blanket of parmesan.
6️⃣ THE BAKE: Fire it into the oven at 430°F for 30 minutes until deeply golden and crispy. Cool on a wire rack to keep that bottom crust ultra-crunchy!
💡 BAKER’S SCIENCE TIP: Delaying the salt by just a few minutes helps the flour hydrate faster and more efficiently, making an 80% wet dough way easier to handle during your folds!
