All the Keystone Rosen rye being grown in Pennsylvania is being grown and researched through the Seed Spark Project with the goal of establishing Keystone Rosen in Pennsylvania, for Pennsylvania's farmers and distillers. Dancing Star Farms, and Iron City Distilling Co. are all partners of the Delaware Valley Fields Foundation's Seed Spark Project this year! Stay tuned here for my interview with renowned American Distiller Matt Strickland, helming the newly minted Iron City Distillery in Creighton, PA. The Smoked Bourbon was created by smoking green dent corn cobs from Dancing Star Farms Seed and then aging it in a new charred oak barrel for four years. It has a bold smoky backbone with notes of burnt caramel on the finish, perfect for sipping this winter!
