Get ready to meet the Oklahoma Onion Smash Burger. 🧅🍔

This classic flat-top burger dates back to the 1920s in El Reno, Oklahoma, when thin-sliced onions were smashed into beef patties to stretch the meat and keep burgers affordable.

Turns out, that little trick also made one seriously good burger.

Here’s the quick version:

* Form 75/25 ground beef into ¼ lb balls
* Slice yellow onion paper thin
* Place 1–2 Tbsp onions on a hot griddle
* Add the beef ball on top and smash it down hard
* Season with Rub Yer Meat BBQ Rub
* Let it sear, then flip
* Add American cheese
* Toast the buns
* Finish with pickles and your favorite toppings

Juicy beef, crispy edges, sweet onions, melty cheese, and just enough rub to make it dangerous.

Cowboy butter might be one of the easiest ways to level up a steak.

Mix it up, chill it, then add a slice on top of your steak while it rests. The butter melts into the crust and mixes with the juices for a rich, garlicky, herby finish.

It’s also great on chicken, pork chops, potatoes, shrimp, bread, and just about anything coming off the grill.

Rub Yer Meat Cowboy Butter

Ingredients:

½ cup unsalted butter, softened
1 tablespoon coarse Dijon mustard
1 tablespoon fresh chives, chopped
1 tablespoon fresh parsley, chopped
2 teaspoons fresh thyme
2 teaspoons garlic, minced
1 teaspoon lemon juice
1 to 1½ teaspoons Rub Yer Meat BBQ Rub

Instructions:

Add softened butter, Dijon mustard, chives, parsley, thyme, garlic, lemon juice, and Rub Yer Meat to a bowl.
Mix until fully combined.
Scoop onto plastic wrap and roll into a log.
Refrigerate for at least 2 hours, or until firm.
Slice and place on hot steaks while they rest, or melt and use as a dip.

Simple, flavorful, and dangerously good on steak.
