🌿🥒 Crispy Fermented Pickles Recipe 🥒🌿

Looking for that perfect crunchy, tangy pickle? These fermented pickles are easy, delicious, and full of probiotic goodness!

✨ Ingredients (for a 1-gallon jar):
• 3–4 lbs small cucumbers
• 1 quart non-chlorinated water
• 3 tbsp pickling salt
• 4–8 cloves garlic
• 2–4 sprigs flowering herbs (like dill or other favorites)
• 1–2 tsp mustard seed
• 2 oak leaves (or grape/cherry leaves) — these help keep pickles crisp!

🥣 Instructions:
1️⃣ Wash cucumbers thoroughly, trim blossom ends, and optionally soak them in ice water to enhance crispness.
2️⃣ Dissolve the salt completely in the non-chlorinated water to create your brine.
3️⃣ Pack cucumbers into your jar along with garlic, herbs, mustard seed, and oak leaves.
4️⃣ Pour the brine over cucumbers until fully submerged. Weigh them down with a fermentation weight or a small clean jar to keep them below the brine.
5️⃣ Cover loosely and ferment at 60–75°F for 5–14 days. Taste starting around day 5.
6️⃣ Once they reach your preferred sourness, transfer to the fridge. Pickles will continue to develop flavor and last for months!

💚 Tip: Crispness is helped by using oak leaves and keeping everything submerged in the brine.

Our first predator attack happened a few weeks ago. We moved one of our flocks up to our upper field where something was regularly picking off any that went astray.

On one of those days, we found our rooster, Dim, killed in the line of duty. His body was laying on the hen who died trying to protect. It was very moving.

I am not a big fan of roosters but over the last few years we saw this guy chase a hawk away. He had a way of talking to the girls so they knew when to take cover or when to come for good food! And he was always a gentleman. He’d call them over and then let them eat first.

When he died, we had a little funeral for him as a family. We dont always do that for our dead chickens but he had been a part of our chicken family He was in our very first batch of chicks ever. His flock was affectionately called “Dim’s flock.” He will be missed.

We have had a lot of chicken drama on the farm lately! Last night a predator attacked our young chickens. This little lady has an injured wing and we mourn the loss of one of her sisters.

Faith wanted to read her a story while she recovers in the “hospital.” She read her Daniel in the Lions Den — Another great story of miraculous overcoming in the face of adversity! Hopefully it spoke to the hen’s little heart.

Sunday family feast night dinner…. Pork chops from the local farmer & neighbor butcher, mashed sweet potatoes and canned green beans from St. Anne’s FarmStand, and applesauce from County Line Orchard. I am amazed at the local eating for late January!!!!
