Or at least has ME covered as a registered dietitian trying to work with kids home this summer, plan a wedding, and maybe mow my lawn…
To actually eat 3 balanced meals each day, and a few snacks, I NEED a few processed, packaged items in my fridge and freezer.
These are the ones I go back to WEEK after WEEK:
Chicken bites - These babies have 24 grams of protein and taste REALLY good. Like way better than cooked chicken that’s been reheated (which I cannot stand for some reason). I add them cold to salads, wraps, rice and veggie bowls, or honestly, sometimes just snack on them straight from the package. The steak bites are also top notch (but a lot more expensive!)
Amylu chicken breakfast sausage. My kids LOVE these and I love how easy they are to make. I either toss a few in the air fryer or the microwave, and add them diced to eggs (You can add them uncooked to my cottage cheese egg bite recipe), or served on the side of something lower in protein like avocado toast or an English muffin.
Avocado cups. I know there’s extra waste with these.. but if you consider how many avocados I have wasted because they go bad before I eat them… it feels like a win. They stay fresh for WEEKS in the refrigerator, and they freeze really well. Each container has 4 grams of fiber, so you can easily boost the fiber and add a flavor and fat boost to tacos, veggie bowls, sandwiches, eggs, toast and more.
Ultra filtered milk. I LOVE ultra filtered milk. It’s super creamy, has 5 more grams of protein per cup compared to regular milk, and it’s lactose-free. I use it for extra protein in anything I use milk in: smoothies, overnight oats, cereal, and just for drinking.
Mini Olipops. I usually get Poppi from Costco (my kids are obsessed and I don’t mind them drinking caffeine-free, low sugar soda), but these mini Olipops are so fun. In the afternoons, I often want a fun lil drink to help me push through, and these have done the trick. Plus, they have 3 grams of fiber per can, which is much more tolerable for some than the 9 grams in the full
