Trying to squeeze in a few more summer flavors before the season is officially over 🍅🍑

This burrata with tomato confit and peaches is such a good combination - creamy, sweet, savory, and so easy to make. Add some crusty bread or serve it over arugula and you’re good to go!

INGREDIENTS
1 pint cherry tomatoes, halved
2 cloves garlic, minced
Olive oil
Salt, to taste
Pepper, to taste
1/4 teaspoon dried oregano
1/4 teaspoon dried parsley
1/4 teaspoon dried rosemary
1/4 teaspoon marjoram
1 peach, diced
Burrata
Balsamic glaze
Basil

INSTRUCTIONS
Preheat oven to 400°F.
In a medium baking dish, add the sliced cherry tomatoes and garlic. Drizzle generously with olive oil. Add salt, pepper, oregano, parsley, rosemary, and marjoram. Stir to combine.
Bake for 15 minutes.
Remove from heat. Add peaches. Stir to combine.
Top with burrata. Drizzle with balsamic glaze. Add salt and pepper to taste. Garnish with basil.
Enjoy!

Stopped by Last Chair Brewery for drinks and food. They’re a cute, casual nano-brewery with a ski-themed, rustic lodge feel 🏔️🍻

We started with a bourbon flight and the street corn dip which was warm, creamy, and topped with cotija cheese. It came with house-fried tortilla chips that were perfect for scooping.

We also got the Boom-Boom Chicken Sandwich - crispy fried chicken topped with boom sauce and pickles on a potato bun 🍗🔥

We also tried the buffalo mac & cheese, but unfortunately the first one had a noticeable propane/soapy taste. They were kind enough to remake it, and the second one was much better, although there was still a slight hint of the same flavor. Hopefully just a one-off kitchen issue!

Definitely a neat spot to grab some food and drinks, especially if you’re into the cozy ski lodge vibe.

Met up with one of our friends at Strange Brew Tavern for dinner the other night. It’s a casual pub tucked away off Elm St. with a solid selection of food and drinks. They still manage to draw a good crowd with live music, comedy nights, and outdoor seating.

We started with the pulled pork poutine, which was so good (I’m a sucker for poutine 🤤), and I went with the fish & chips for dinner. The portion was generous, and everything hit the spot!

Finally made it to The Junction Restaurant + Provisions, a highly rated spot we’ve been wanting to check out! It’s a trendy little bar and restaurant with an urban vibe that focuses on locally sourced, seasonal ingredients.

We started with the short rib poutine and Brussels sprouts (not pictured) - both were tasty. I had the boar ragu with whipped ricotta, fresh basil, heirloom tomatoes, fennel, greens, and Parmigiano-Reggiano - also really tasty.

Our waiter was also really friendly and attentive, which always makes a dinner out better. Definitely glad we finally made it here!

Had a really nice evening with friends at Northwoods Brewing Co. 🍻 The place is way bigger than we expected, with a tasting room, restaurant, and ice cream shop all in one.

We tried a couple of their beers and shared some wings. I got the clam chowder and shrimp tacos - both were really tasty.

And of course we had to get ice cream, so we finished the night hanging out in their outdoor seating area🍦
