Merry Christmas and Happy Holidays. Thank you for all of the support this year. We have tried to deliver holiday treats to everyone on our client list this year. I have made plenty but if you'd like to make them yourself see the recipe below.
Pecan Smackers
Ingredients
1 egg white
3/4 cup brown sugar
2 tablespoons self-rising flour
1 teaspoon vanilla extract
2 cups pecan halves
Baking
Step 1: Beat egg white until stiff.
Step 2: Mix everything but the pecans together in a large bowl.
Step 3: You can either (A) Mix all the pecans into the bowl or (B) Dip individual pecans into the mixture. Either way, place the dipped pecans onto a cookie sheet lined with parchment paper. Try to leave a small gap between each pecan half.
Step 4: Bake at 250 degrees for 30 minutes.
Step 5: After the cooking timer sounds, turn the oven off and leave the tray of pecan smackers in the warm oven for an additional 20-30 minutes or until the bottom of the smacker comes off dry and smooth. This step is important to remove moisture and have a crispy treat. You can add them back into a warm oven if they are still sticky on the bottom.
