Cutting celery is a leafy herb grown for its intense, peppery leaves and thin stems, whereas regular celery is a standard vegetable grown for thick, crunchy stalks.

To dry celery for seasoning, use a food dehydrator or oven to completely dry the nutrient-rich leaves and sliced stalks until they are brittle, then grind them into flakes or a fine powder.
