Erick Labra’s Famous Blueberry Pancakes
Ingredients:
2 cups all purpose flour
3 tbsp cane sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
1 3/4 cups buttermilk
4 tbsp salted butter, melted and slightly cooled
2 tsp pure vanilla bean paste
1 1/4 cups fresh blueberries
Butter for cooking
For serving:
Salted butter
maple syrup
Fresh blueberries
Instructions:
1.In a large bowl, whisk together the flour, cane sugar, baking powder, baking soda, and salt.
2.In a separate bowl, whisk together the eggs, buttermilk, melted butter, and vanilla bean paste.
3.Pour the wet ingredients into the dry ingredients and fold until just combined. Don’t overmix; a few lumps are good!
4.Let the batter rest for 10 minutes.
Heat a nonstick skillet or griddle over medium low to medium heat and add a little butter.
5.Scoop about 1 cup (you can make them smaller too! I usually do 1/3 cup and get about 8 pancakes) of batter per pancake onto the pan. Press several fresh blueberries into the top of each pancake.
6.Cook for 2–3 minutes, until bubbles form on top and the edges begin to set. Flip and cook until golden and cooked through.
6.Stack the pancakes and serve with salted butter, maple syrup, and fresh blueberries.
