Simple Lemon Cheesecake Slice

Ingredients:

2 cups crushed digestive biscuits
½ cup melted butter
16 oz cream cheese, softened
¾ cup granulated sugar
2 large eggs
½ cup sour cream
¼ cup fresh lemon juice
1 tbsp lemon zest
1 tsp vanilla extract

Directions:

Preheat oven to 325°F (160°C) and line an 8x8-inch pan with parchment paper.
Mix crushed biscuits with melted butter until combined.
Press mixture firmly into the bottom of the pan to form the base.
Bake for 10 minutes, then let it cool slightly.
In a bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing gently after each.
Stir in sour cream, lemon juice, lemon zest, and vanilla until creamy.
Pour filling over the cooled base and smooth the top.
Bake for 30–35 minutes until the center is just set.
Turn off oven, leave the door slightly open, and let cool inside for 1 hour.
Refrigerate for at least 3–4 hours before slicing.

Ingredients:

2 cups crushed Biscoff cookies
½ cup melted butter
16 oz cream cheese, softened
¾ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup sour cream
½ cup Biscoff spread
½ cup Nutella
¼ tsp salt

Directions:

Preheat oven to 325°F (160°C) and line an 8x8-inch baking pan with parchment paper.
Mix crushed Biscoff cookies with melted butter until combined.
Press the mixture firmly into the bottom of the pan to form the crust.
Bake the crust for 10 minutes, then let it cool slightly.
In a bowl, beat cream cheese and sugar until smooth and creamy.
Add eggs one at a time, mixing gently after each addition.
Stir in vanilla extract, sour cream, and salt until fully combined.
Divide the cheesecake batter evenly into three bowls.
Mix Biscoff spread into one bowl and Nutella into another, leaving the third plain.
Pour the plain layer over the crust and smooth the top.
Gently add the Biscoff layer on top, spreading evenly.
Finish with the Nutella layer, smoothing carefully.
Bake for 35–40 minutes until the center is just set.
