ried Strawberry Cheesecake Sandwiches
1 cup fresh strawberries, hulled and sliced
8 ounces cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
8 slices of bread (white or whole wheat)
1 cup crushed graham crackers
2 large eggs
1 cup milk
1 teaspoon cinnamon
Vegetable oil, for frying
Whipped cream, for serving (optional)
1. In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
2. Spread a generous layer of the cream cheese mixture on four slices of bread. Top with sliced strawberries and then place the remaining four slices of bread on top to create sandwiches.
3. In a shallow dish, whisk together the eggs, milk, and cinnamon until well combined.
4. Dip each sandwich into the egg mixture, ensuring both sides are coated. Then, press the sandwiches into the crushed graham crackers to coat the outside.
5. In a large skillet, heat about 1 inch of vegetable oil over medium heat. Once hot, carefully place the sandwiches in the oil, frying them in batches if necessary. Cook for about 2-3 minutes on each side, or until golden brown.
6. Remove the sandwiches from the skillet and place them on a paper towel-lined plate to drain excess oil.
7. Serve warm, optionally topped with whipped cream.
