🧀 Mexican Restaurant Cheese Dip 🌶️
Ingredients:
• 1 tablespoon olive oil
• 1/4 cup diced onion
• 1 clove garlic, minced
• 1 can (10 ounces) diced tomatoes and green chilies, undrained
• 1/2 teaspoon ground cumin
• 1/4 teaspoon chili powder
• 1/4 teaspoon paprika
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 1/4 cup chopped fresh cilantro
• 2 cups shredded Mexican cheese blend
• 1/2 cup half-and-half
Instructions:
. Heat olive oil in a medium saucepan over medium heat. Add diced onion and minced garlic, and cook until softened, about 2-3 minutes.
. Stir in diced tomatoes and green chilies, ground cumin, chili powder, paprika, salt, and black pepper. Cook for another 2-3 minutes, stirring occasionally.
. Reduce heat to low and add chopped fresh cilantro, shredded Mexican cheese blend, and half-and-half. Stir until the cheese is melted and the dip is smooth and creamy.
. Serve the Mexican Restaurant Cheese Dip warm with tortilla chips or your favorite dipping snacks.
