FRIED CHICKEN WITH STICKY POPPY SEED JAM
This chicken was fire!! Neither of us had ever made fried chicken before, but we will definitely be making it again. It was so light and airy, and had the perfect breading. As one would think, it was a bit of work which requires an assembly line, but it was worth the work! We both really liked the poppy seed jam. How could you go wrong with honey and poppy seed!

TIP: Of course we made this recipe (mostly) Paleo. We used a gluten free flour and made our own buttermilk with lemon and almond milk. Although vegetable oil isn’t exactly Paleo.. but it still turned out amazing. Joanna’s ways of cooking still tend to work with switching some ingredients. If you have dietary restrictions, just go for it!

WHITE BEAN HUMMUS

Neither of us were very excited about trying this recipe. Which is kinda strange cause we both like hummus, but we finally got around to it. It was SO good. Jon may have been an even bigger fan than me. He’s never asked for more hummus before, but he did with this recipe. Also, it was super easy to make! Basically just thrown all in the food processor and serve it up!

TIP: My favorite part was the pine nuts so keep those around for leftovers. This would be great with some sweet potato chips. But paleo crackers and chips were pretty good too!

CURRY CHICKEN SALAD

OBSESSED!!! I’m not sure that I had ever eaten anything with curry before this, and honestly I was scared. It’s a strong flavor that a lot of people don’t care for, but I am a new fan! Jon has even made some stir fry with curry since we’ve made this. As much of a fan of curry as I am now, I’m even more of a fan of water chestnuts! I even threw some extra in while I was eating for some extra crunch.

TIP: Another easy one to make Paleo. You can use Paleo mayo and coconut aminos and then serve with Paleo bread or crackers. Still so delicious!

SOUFFLED BROCCOLI CASSEROLE
Our final side dish! Joanna has a lot of egg based dishes. Most are breakfast, but some savory as well. While I’m a big fan of breakfast casseroles, this souffled broccoli was a pleasant surprise! Jon wasn’t the biggest fan, but he did enjoy his first serving. I enjoyed all the rest of the servings 🙃.

TIP: This time we learned our lesson with the amount of garlic Joanna likes to use. So we put half and it turned out just fine!

CHERRY-ALMOND CRISP
One last summer hoorah! I’m not actually sure when cherries are in season, but this felt like a good summery treat to try before we go full swing into Fall. This recipe was very easy to make, and as long as you have a lot of ramekins, it would be great for a small gathering/dinner party. The cherries were so juicy with sugary goodness and the the rolled oats were crispy with brown sugary goodness. Of course, you can’t go wrong with vanilla ice cream.

TIP: I guess cherries aren’t in season in September, so we gave up. Then we read the recipe that you could buy a frozen bag and let them thaw. So back to the store we went. It definitely worked, but we accidentally bought too small of a bag. Soooo… we ended up making half a batch with some thawed strawberries instead (which was pretty good btw). The tip would be to triple check the recipe and save yourself three trips to the store.

BRUSSELS SPROUTS WITH CRISPY BACON, TOASTED PECANS, & BALSAMIC REDUCTION

Another side dish sure to impress! If I could eat this for every steak/lamb/chicken meal, I would 100% do it. The crispy bacon is an obvious win, but the toasted pecans add a touch of nutty sweetness. Then the balsamic to add a kicker. These were a hit. We have even made them a couple time since!

TIP: My usual tip with these kind of dishes. The vinegars are always really strong, so you can go easy on it or opt out all together. Up to you!

GREEN BEANS AMANDINE
These are by far the fanciest green beans I’ve ever eaten, let alone cooked for myself. They were so stinkin’ good! Not the healthiest green beans I might add. But brown sugar, sherry vinegar, and toasted almonds really elevate the dish.

TIP: Maybe go easy on the apple cider vinegar. ACV is always super strong, so if you don’t like it or have never tasted it, just something to consider.

PEACH & ALMOND TART WITH WHIPPED MASCARPONE

This dessert was very fancy and pretty time consuming to make. The peaches were a lot of work, and the skins didn’t come off at all after they were done in their sugar bath. BUT it was pretty tasty! My only complaint about the taste was that the peaches never really softened up. I don’t care for any cooked fruit that isn’t soft. However, the mascarpone whipped topping saved the day!

TIP: Jon suggested that maybe next time we fully submerge the peaches. His pot may have been too big. Also, I was in charge of the whipped topping. Listen to Joanna when she says the cheese and heavy cream have to be room temperature. My cream was cold and it did in fact curdle like she said it would.. lesson learned!

BEEF STEW W/ PALEO CORNBREAD
I’m sure most of you can’t even imagine beef stew right now with the weather we’re having, but we’ve only got a couple recipes left and I could make this one Paleo! Really just replaced the potato with sweet potato and everything else was good to go. Anyway, this was really good! I actually prepped this recipe the night before by cutting all the veggies and potatoes, so when I got home from dance I just plopped in all in the pot.

TIP: Not sure what happened to the stew meat but it was kinda dry and tough. It was cheap Walmart stew meat 🤷‍♀️ But maybe just don’t cook as long as she says to. If you need Paleo cornbread.. Miss Jones has one on Amazon. Just add a little approved sugar to sweeten it up, and it’s delish!

LEMON & LAVENDER ICEBOX COOKIES
Have to admit, I was a little nervous about this one. I’ve never had any edible items that contained lavender, and I have heard some people say it tastes like soap. THEY ARE WRONG!! (No offense.) The lavender is so refreshing! The lemon is lemon and very delicious, but mixed with a hint of lavender it just sells it even more.

TIP: Don’t forget they are ice box cookies, so you have to chill them all day or overnight. Also, it makes two logs. So you can freeze one and make the other one later for more fresh cookies. Also, you can make the key lime cookies at the same time on the next page. We should’ve done that.

TRICK-OR-TREAT!!! Not gonna lie, we had really high hopes for this year. This is our first official Halloween in the new house, but we had heard good things about the neighborhood. We weren’t disappointed! The house was all decked out and we bought a little too much candy 🍫. But overall, it was a success!

Loving how the outside turned out with the new addition of purple this year. I’ve always gone straight orange (I always feel like purple isn’t bright enough). But we were able to filter our existing disc lights and get some color changing bulbs for the chandelier 🤩. Also, did you notice the attic lights?? They’re subtle, but I think they’re spooky for sure!

Chicken & Dumplings: Boy, was this hard to photograph 😆 spider coming in clutch.. Anyway, these chicken and dumplings are a must try. I’ve never made my own. Honestly I’ve only ever tried them at Cracker Barrel. I was actually obsessed with ordering them there as a kid. I was hoping this would live up to those good memories. It did. This was actually a very simple recipe and we even cooked the chicken as opposed to buying it pre-made. We did use store bought biscuits though as they are much easier than scratch. Overall, highly recommended.

Tip: Buy a pre-cooked chicken for even easier prep. This makes SO many servings, so make it for guests or be ready to store it! We ate probably 10 bowls and had to freeze the rest 🙃
