🌱 The wing bean 🐉 season has arrived—and it’s starting earlier than usual this year, thanks to all the rain we’ve been getting! These striking, winged pods are crisp, tender, and naturally sweet when harvested young.

🗓 Best Time to Plant & Harvest:
Wing beans thrive in warm weather, so I plant them in late spring once the soil consistently stays above 70°F—usually around May here in Texas. With plenty of sun and moisture, they begin producing in about 75–90 days. Harvest them while they’re still bright green and tender for the best flavor and texture.

🍽 Favorite Ways to Enjoy Them:
Wing beans are incredibly versatile—delicious stir-fried with garlic and fish sauce, tossed in a lemongrass coconut curry, or blanched and served with dipping sauce. I’m hoping my nieces will love these just as much as they do the red dragon beans!

Growing and cooking these garden gems brings me so much joy—there’s nothing better than sharing fresh, homegrown food with family. 💚

Today’s harvest turned into a mouthwatering Chicken Satay platter—grilled to perfection and served with a creamy almond butter dipping sauce. Paired with crisp romaine, julienned cucumber and carrot, vibrant cilantro, and a medley of herbs straight from the garden: Thai basil, Vietnamese lemon balm, and basil 🍃.

🌿✨ My favorite time of the morning is stepping into the garden and seeing what magical surprises grew overnight. Today’s harvest was bursting with life and color — it truly fills my heart with gratitude.

This beautiful basket is overflowing with bishop’s crown peppers (how cute are their little hats?), golden and green hues side by side, snuggled among purple long beans. The second harvest brings in a vibrant mix of eggplants, cucumbers, bitter melon, and finished with a tropical touch — fresh-picked plumeria and Mexican petunia (Ruellia) blossoms.

Every morning in the garden reminds me how nature gives in abundance when you care with love 💚💜💛

🌸 Morning Walk Discovery: The Jacaranda Tree 🌸

On our early morning walk through Southern California, we came across this stunning Jacaranda tree in full bloom. Its vibrant purple trumpet-shaped flowers are absolutely breathtaking and create a magical canopy that truly stops you in your tracks.

The Jacaranda not only dazzles with its blooms but also produces unique wooden pods filled with clusters of winged seeds. When mature, the pods open up and release the seeds to the wind — nature’s way of spreading beauty!

Well… on the way back, I couldn’t resist collecting a few pods. Now I have plenty of seeds to share if anyone is interested in growing their own Jacaranda tree! 🌱

💜 Growing in Houston? Here’s what you need to know:
Jacaranda trees can grow in Houston, but with a little extra care. They prefer:
• Full sun (at least 6 hours of direct sunlight)
• Well-draining soil
• Protection from freezing temps (Young trees are frost-sensitive)
• A sheltered spot if planting outdoors — or grow it in a large pot so you can bring it in during a freeze

While they may not reach the full size and grandeur of their Southern California cousins, Jacarandas can still thrive and bloom beautifully in Houston’s climate with the right conditions.

Garden to Table Goodness! 🌿🌶🍛

Tonight’s dinner: Thai Panang Curry made with fresh ingredients straight from the garden—lemongrass, Thai chili peppers, curry leaves, and red dragon long beans. Creamy, spicy, and herbaceous… just the way it should be!

Panang curry (also spelled Phanaeng) is believed to have originated in central Thailand, with influences from Indian and Malaysian cuisine. It’s a rich, mild curry made with coconut milk, red curry paste, and ground peanuts—giving it that signature creamy texture and slightly nutty flavor. Unlike other Thai curries, Panang is less soupy and more of a thick, velvety sauce that clings beautifully to each bite. 🇹🇭

When you grow the herbs yourself, it hits different.

The rain really did its magic this week—look at this harvest! The garden is popping with peppers, eggplants, okra, bitter melon, and even some sweet little tomatoes. Toss in some plumeria and hibiscus blooms, and it’s basically a tropical rainbow in a basket 🌈🌺

🔥🌿 Straight from the garden… and the Gulf! 🌊

Tonight’s dinner was extra special — a spicy red snapper creole in a creamy herb and pepper sauce, all made from scratch. I used my homegrown Arapaho peppers — just the right touch of heat — blended with fresh garden herbs to create a rich, savory sauce that brings the flavor!

And the snapper? Freshly caught by my brother 🎣. When the garden meets the Gulf, you get something truly delicious on the plate.

There’s something truly magical about harvesting in the early morning—the dew still clings to the leaves, the garden slowly wakes with birdsong, and the fresh air is filled with the scent of earth and bloom.

This morning’s harvest brought in a vibrant mix of eggplants, golden cherry tomatoes, okra, cucumbers, baby green tomatoes, and fragrant Purple Sweet Basil—all cradled by bursts of bougainvillea and the lush backdrop of hibiscus blooms.
