Baked Italian Chicken Rollatini 🍗🧀

Ingredients

4 boneless, skinless chicken breasts, sliced thin

8 slices turkey ham

8 slices provolone cheese

1 cup Italian-seasoned breadcrumbs

2 tbsp olive oil

2 tbsp melted butter

½ cup chicken broth

1 tsp Italian seasoning

½ tsp garlic powder

½ tsp salt

¼ tsp black pepper

1 tbsp fresh parsley, chopped

Instructions

1. Slice the chicken breasts horizontally and pound them until thin and even.

2. Season both sides with salt, black pepper, garlic powder, and Italian seasoning.

3. Place a slice of turkey ham and a slice of provolone cheese over each chicken cutlet.

4. Roll each chicken cutlet tightly and place seam-side down in a lightly greased baking dish.

5. Brush the rolls with olive oil and melted butter, then coat evenly with Italian-seasoned breadcrumbs.

6. Pour the chicken broth around the chicken rolls.

7. Bake in a preheated oven at 375°F (190°C) for about 30–35 minutes, until golden brown and the chicken reaches 165°F (74°C) internally.

8. Let rest for 5 minutes, then sprinkle with fresh parsley.

9. Serve warm and enjoy the melted cheesy center!

Chef tip: Pound the chicken evenly and roll it tightly to keep the cheese inside while baking. For extra golden, crispy breadcrumbs, lightly drizzle the tops with olive oil before baking.

Garlic Butter Steak Bites

Ingredients

1 lb (450 g) sirloin steak, cut into bite-size pieces

2 tbsp butter

1 tbsp olive oil

5 garlic cloves, minced

1 tsp Italian seasoning

½ tsp paprika

½ tsp salt

¼ tsp black pepper

1 tbsp fresh parsley, chopped

Instructions

1. Pat the steak pieces dry and season with salt, pepper, paprika, and Italian seasoning.

2. Heat olive oil in a large skillet over high heat.

3. Add the steak bites in a single layer and sear for about 2–3 minutes per side until browned and cooked to your preferred doneness.

4. Reduce the heat to medium. Add butter and minced garlic.

5. Toss the steak bites in the garlic butter for 30–60 seconds until fragrant.

6. Remove from heat and sprinkle with fresh parsley.

Chef tip: Don't overcrowd the pan—searing in batches gives the steak bites a much better crust.

Ribbon Zucchini & Carrot Salad with Sesame Vinaigrette — Ready in Just 10 Minutes
Prep Time: 10 minutes
Cook Time: 0 minutes
Total Time: 10 minutes
Servings: 2

Ingredients
1 large carrot
1 medium zucchini
1 tsp sesame oil
1 tbsp rice vinegar
1 tsp soy sauce (or tamari, for gluten-free)
1/2 tsp honey or maple syrup
Sesame seeds, for garnish
Instructions
Using a vegetable peeler, create long, thin ribbons from the carrot and zucchini, rotating as you go to get even strips.
In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, and honey (or maple syrup) until well combined.
Place the carrot and zucchini ribbons in a large bowl.
Pour the dressing over the ribbons and gently toss to coat evenly.
Sprinkle with sesame seeds and serve immediately, or chill for 10–15 minutes for a more marinated flavor.
Pro Tips for Success
Salt your zucchini first for extra crunch: If you want to prevent excess water from pooling in the bowl, lightly salt the zucchini ribbons and let them sit on a paper towel for 5 minutes before tossing.
Don't dress it too early: For the crispest texture, add the vinaigrette right before serving. If meal-prepping, store the dressing separately and toss just before eating.
Storage: Undressed ribbons keep well in an airtight container in the fridge for up to 3 days. Once dressed, it's best enjoyed within 24 hours.
