High protein, low carb, and on the table in under 20 minutes.

This bowl has become my go-to when I want something that actually fills me up without the crash. Grilled chicken, crisp greens, creamy avocado, and a sauce that makes the whole thing taste like it came from a restaurant.

INGREDIENTS:
- 2 chicken breasts
- 2 cups fresh spinach or mixed greens
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/2 cup cucumber, diced
- 2 hard-boiled eggs
- 1/4 cup shredded red cabbage
- 2 tbsp olive oil
- Salt, pepper, garlic powder to taste
- Dressing: 2 tbsp Greek yogurt, 1 tbsp lemon juice, 1 tsp Dijon mustard, salt to taste

INSTRUCTIONS:
1. Season chicken with olive oil, salt, pepper, and garlic powder. Grill or pan-sear 6 to 7 minutes per side until cooked through. Let rest 5 minutes, then slice.
2. Whisk together Greek yogurt, lemon juice, and Dijon mustard. Add salt to taste.
3. Build the bowl: start with greens, then layer chicken, tomatoes, cucumber, avocado, eggs, and cabbage.
4. Drizzle dressing over the top and serve immediately.
