Cheesy Broccoli Casserole
Ingredients
4 cups fresh broccoli florets (or 2 bags frozen, thawed)
1 can (10.5 oz) cream of mushroom or cream of chicken soup
1 cup mayonnaise
1½ cups shredded sharp cheddar cheese, divided
1 small onion, finely chopped (optional)
1 tsp garlic powder
½ tsp salt
¼ tsp black pepper
1 cup crushed Ritz crackers (or breadcrumbs)
2 tbsp unsalted butter, melted
Instructions
Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish. Steam fresh broccoli until just tender or cook frozen broccoli as directed, then drain.
In a large bowl, mix soup, mayonnaise, 1 cup cheddar cheese, onion (if using), garlic powder, salt, and black pepper until smooth. Stir in broccoli until evenly coated and transfer to the baking dish.
Combine crushed crackers with melted butter and sprinkle over the casserole. Top with remaining cheddar cheese.
Bake for 25-30 minutes until bubbly and golden brown. Let sit before serving.
