Fresh Mediterranean Ground Beef Wrap with Cucumber Lemon Feta Sauce
Ingredients
Ground Beef Filling
1 lb ground beef
1 tablespoon olive oil
1 small onion, finely diced
3 garlic cloves, minced
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon tomato paste
2 tablespoons chopped parsley
Cucumber Lemon Feta Sauce
1 cup Greek yogurt
½ cup feta cheese, crumbled
½ cucumber, finely grated and drained
1 tablespoon lemon juice
1 teaspoon lemon zest
1 small garlic clove, grated
1 tablespoon olive oil
Salt and black pepper to taste
Wrap Assembly
4 large tortillas or flatbreads
1 cup shredded lettuce
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
Optional Garnish
Extra feta cheese
Fresh parsley
Lemon wedges
Directions
Heat olive oil in a skillet over medium heat. Add onion and cook until softened, then add garlic and cook for 30 seconds.
Add ground beef and cook until browned, breaking it apart as it cooks.
Stir in smoked paprika, cumin, oregano, salt, pepper, and tomato paste. Cook for 2–3 minutes, then finish with chopped parsley.
In a bowl, mix Greek yogurt, feta, grated cucumber, lemon juice, lemon zest, garlic, olive oil, salt, and pepper until creamy.
Warm the tortillas or flatbreads until soft.
Spread cucumber lemon feta sauce over each wrap.
Top with seasoned ground beef, lettuce, tomatoes, and red onion.
Roll tightly, slice if desired, and serve immediately with extra sauce or lemon wedges.
