Chocolate Chip Ice Cream

Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips

Steps:
1. In a medium saucepan, combine cream, milk, and half of the sugar. Heat over medium until just steaming.
2. In a bowl, whisk egg yolks with remaining sugar until pale and slightly thick.
3. Gradually whisk half of the hot milk into the yolks to temper, then pour the yolk mixture back into the saucepan with the rest of the milk.
4. Cook over medium heat, stirring constantly, until thick enough to coat the back of a spoon (about 170-175°F / 77-80°C).
5. Remove from heat. Stir in vanilla and salt.
6. Chill the custard thoroughly, at least 4 hours or overnight.
7. Fold in chocolate chips once cold.
8. Pour into a shallow container and freeze. Stir every 30-60 minutes for the first 2-3 hours to reduce ice crystals, then freeze until firm, about 4-6 hours.

Butter Pecan Ice Cream

Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 4 large egg yolks
- 1 tablespoon vanilla extract
- 1 cup pecans, chopped
- 1 tablespoon butter
- pinch of salt

Instructions:
1. Toast pecans in butter with a pinch of salt until fragrant; cool and chop.
2. In a saucepan, heat cream, milk, and sugar until steaming (do not boil).
3. Whisk yolks; gradually whisk in hot dairy to temper.
4. Return to pan; cook over medium heat, stirring, until thick enough to coat the back of a spoon.
5. Remove from heat; stir in vanilla.
6. Chill custard until very cold.

Ingredients:

- Peach filling: 2 cups peaches, peeled and diced; 1/4 cup granulated sugar; 1 tablespoon lemon juice
- Cobbler crumble: 1/2 cup all-purpose flour; 1/4 cup brown sugar; 4 tablespoons cold unsalted butter, cut into small pieces; pinch of salt

Instructions:
1) Peach filling: Toss peaches with 1/4 cup sugar and lemon juice; macerate 15 minutes.

2) Crumble topping: Mix flour, brown sugar, and salt; cut in butter until crumbly.

Ingredients:
- 2 cups blackberries, fresh or frozen
- 3/4 cup granulated sugar, divided
- 1 cup heavy cream
- 1/2 cup milk
- 2 large egg yolks
- 1 teaspoon vanilla extract
- Pinch of salt

Steps:

No Bake Peanut Butter Cheesecake

Ingredients:
- Crust:
- 1 1/2 cups graham cracker crumbs
- 3 tablespoons granulated sugar
- 6 tablespoons unsalted butter, melted
- Filling:
- 16 oz cream cheese, softened
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream, cold

Directions:
