Chocolate Chip Ice Cream
Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
Steps:
1. In a medium saucepan, combine cream, milk, and half of the sugar. Heat over medium until just steaming.
2. In a bowl, whisk egg yolks with remaining sugar until pale and slightly thick.
3. Gradually whisk half of the hot milk into the yolks to temper, then pour the yolk mixture back into the saucepan with the rest of the milk.
4. Cook over medium heat, stirring constantly, until thick enough to coat the back of a spoon (about 170-175°F / 77-80°C).
5. Remove from heat. Stir in vanilla and salt.
6. Chill the custard thoroughly, at least 4 hours or overnight.
7. Fold in chocolate chips once cold.
8. Pour into a shallow container and freeze. Stir every 30-60 minutes for the first 2-3 hours to reduce ice crystals, then freeze until firm, about 4-6 hours.
