Apple Blueberry Yogurt Cake

Fresh, soft, and beautifully simple.

Ingredients:

1½ cups all-purpose flour
1½ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
2 large eggs
¾ cup plain Greek yogurt
⅓ cup honey
¼ cup melted unsalted butter
1 teaspoon vanilla extract
1 cup peeled and diced apple
¾ cup fresh or frozen blueberries
1 tablespoon flour, for coating the fruit

Directions:

Preheat the oven to 180°C (350°F). Line an 8-inch round pan with parchment paper and grease the sides lightly.
Combine the flour, baking powder, baking soda, cinnamon and salt.
Whisk the eggs, Greek yogurt, honey, melted butter and vanilla in a separate bowl.
Add the dry ingredients and stir until almost combined.
Toss the diced apple and blueberries with 1 tablespoon of flour.
Fold the coated fruit gently into the batter.
Spread the batter evenly in the prepared pan.
Bake for 32–38 minutes, until lightly golden and a toothpick inserted into the center comes out clean.
Cool in the pan for 15 minutes.
Remove the cake from the pan and cool completely before slicing.

Ingredients:

¼ teaspoon salt
2 large eggs
¾ cup plain Greek yogurt
⅓ cup pure maple syrup
¼ cup melted unsalted butter
1 teaspoon vanilla extract
1¼ cups peeled and finely diced apple
½ cup chopped walnuts
1 tablespoon oat flour, for coating the apple

Directions:

Preheat the oven to 180°C (350°F). Line an 8×4-inch loaf pan with parchment paper.
Combine the oat flour, baking powder, baking soda, cinnamon and salt.
In a separate bowl, whisk the eggs, Greek yogurt, maple syrup, melted butter and vanilla.
Toss the diced apple with 1 tablespoon of oat flour.
Add the dry mixture to the wet ingredients and stir gently.
Fold in the coated apple and chopped walnuts.

Ingredients:

¼ teaspoon ground nutmeg
¼ teaspoon salt
2 large eggs
½ cup plain Greek yogurt
½ cup apple cider
¼ cup honey
¼ cup melted unsalted butter
1 teaspoon vanilla extract
1 cup peeled and finely diced apple

Directions:

Preheat the oven to 180°C (350°F). Line an 8×8-inch pan with parchment paper.
Combine the oat flour, baking powder, baking soda, cinnamon, nutmeg and salt.

Ingredients:

2 medium apples, peeled and diced
1 tablespoon unsalted butter
1 tablespoon honey
1 teaspoon ground cinnamon
1 tablespoon water
2 cups plain Greek yogurt
2 tablespoons maple syrup
½ teaspoon vanilla extract
½ cup rolled oats
2 tablespoons chopped walnuts

Directions:

Cook the apples with butter, honey, cinnamon and water for 6–8 minutes.
Mix the Greek yogurt with maple syrup and vanilla.
Allow the apples to cool.

⅓ cup honey
2 tablespoons melted unsalted butter
1 teaspoon vanilla extract
⅓ cup fresh or frozen blueberries
⅓ cup fresh or frozen raspberries
⅓ cup fresh or frozen blackberries
1 tablespoon oat flour, for coating the berries

Directions:

Preheat the oven to 180°C (350°F). Line an 8×8-inch pan with parchment paper.
Combine the oat flour, baking powder, baking soda and salt.
In a large bowl, whisk the eggs, Greek yogurt, honey, melted butter and vanilla until smooth.
Add the dry ingredients and stir gently until evenly combined.
Cut any large blackberries in half.
Combine all three berries and coat them with 1 tablespoon of oat flour.
Fold the berries gently into the batter, taking care not to crush them.

½ teaspoon ground cinnamon
¼ teaspoon salt
1 cup peeled and finely diced ripe peach
1 tablespoon oat flour, for coating the peach

Directions:

Preheat the oven to 180°C (350°F). Line a standard 12-cup muffin pan with paper liners.
Combine the oat flour, baking powder, baking soda, cinnamon and salt.
In a large bowl, whisk the mashed bananas, eggs, Greek yogurt, honey, melted butter and vanilla until evenly combined.
Add the dry ingredients and stir gently until no dry flour remains.
Toss the diced peach with 1 tablespoon of oat flour.
Fold the coated peach gently into the batter.
