Chickpea curry. Combined a few recipes I found online. Sautee med white onion (diced), half bell pepper (chopped), 2 roma tomatoes (chopped) & 3 scallions in grapeseed oil until fragrant. Add 1 tbsp onion powder, 1/4 tsp ginger powder, 1/4 tsp coriander, 5 sprigs fresh thyme, 1 bay leaf (remove when finished), 1tbsp curry powder, cayenne & sea salt. Cook for about 4 minutes. Add chickpeas (1/2 cups) & mix well. Cook for 2 minutes. Turn off heat. Stir in 1/2 cup coconut milk. Top with fresh basil.
Served with quinoa & flatbread 😋

New trick! Tofu in the waffle iron! I cut a thin piece and coated it in arrowroot (cornstarch works too) and seasoned like I normally would tofu scramble, then coated the waffle iron in melted country crock (the plant based olive oil one). Gives it a nice crispy outside. This is a great hack if you don’t have an air fryer. Fast and easy. Tofu from Aldi and spices from a bit of everywhere lol
(I used garlic powder, onion powder, kala namak, salt, turmeric, black pepper, and nooch with arrowroot)

People need to invest in an instant pot I can make homemade soup in 26 minutes that tastes like it's been cooking all day ond then just put it in solo cups and freeze it then take it out of the Solo cup after it freezes and put in Ziploc bags and just pull out when u need it and thaw in microwave way better and less sodium then can soups and I'm not judging anyone I just know what sodium can do to the body no matter how much water you drink just trying to help

Vegan Chocolate Chip Cookie Dough Dip
Ingredients:
1 can (15 oz) chickpeas (drained and rinsed) or 1 1/2 cups cooked chickpeas
1/4 cup natural peanut butter (or almond butter)
1/4 cup maple syrup (or agave syrup)
1 tsp vanilla extract
1/4 tsp salt
1/4 cup dairy-free chocolate chips (or chopped chocolate)
2-3 tbsp plant milk (almond, oat, or soy milk) for creaminess (optional)
Instructions:
1. Prepare the Chickpeas:
Drain and rinse the chickpeas well to remove any brine.
Pat them dry with a paper towel or clean kitchen towel to remove excess moisture.
2. Blend the Dip:
Add the chickpeas, peanut butter (or almond butter), maple syrup, vanilla extract, and salt to a food processor or high-speed blender.
Blend until smooth and creamy. If the mixture is too thick, add plant milk one tablespoon at a time until you reach your desired consistency (thick but scoopable).
Taste and adjust sweetness, adding more maple syrup if you like it sweeter.

I drink a smoothie every morning and this morning I didn’t have any almond milk. So, I decided to make some Oat Milk, this was the best tasting milk I ever had. I think that I will be making my own milk for now on…..Next Almond Milk 🥛
Recipe:
1 cup oat
1/2 tsp vanilla
1/4 tsp sea salt
1-2 tbsp maple
4 cups of water
Blend for 30 mins, if blended longer it may become slimy. Pour the milk into a cheese cloth or a nut cloth and squeeze the milk into a bowl. Pour the milk from the bowl in an airtight container. Keep in refrigerator up to 5

Experimenting with oatmeal.
Made a pot of oatmeal this morning, complete with raisins, nutmeg, and brown sugar, and then chilled it in a glass container in the fridge.
Sliced into damp bars they are tasty cold, but even nicer grilled.
I'll try some other versions and see if I can't make this more portable.

I made my own oil-free houmous today and it was great, so creamy! Much better and cheaper than shop bought. You can just use the aquafaba (chickpea liquid) instead of oil. Start by blending the chickpeas with the aquafaba and then add the other ingredients. Measurements were:
1 cup tinned chickpeas
Half cup of aquafaba
1 teaspoon garlic puree
2 teaspoons tahini
Juice of half/a whole lemon - to taste
Good sprinkling of salt - to taste
It made a lot, more than a pot from the supermarket.
