Chickpea curry. Combined a few recipes I found online. Sautee med white onion (diced), half bell pepper (chopped), 2 roma tomatoes (chopped) & 3 scallions in grapeseed oil until fragrant. Add 1 tbsp onion powder, 1/4 tsp ginger powder, 1/4 tsp coriander, 5 sprigs fresh thyme, 1 bay leaf (remove when finished), 1tbsp curry powder, cayenne & sea salt. Cook for about 4 minutes. Add chickpeas (1/2 cups) & mix well. Cook for 2 minutes. Turn off heat. Stir in 1/2 cup coconut milk. Top with fresh basil.
Served with quinoa & flatbread 😋
