Hearty lentil vegetable stew 🤤

Ingredients (Serves 4–6)
Main Ingredients
1½ cups brown lentils, rinsed
2 tbsp olive oil
1 onion, diced
3 cloves garlic, minced
2 carrots, chopped
2 potatoes, cubed
2 tomatoes, chopped
4 cups vegetable broth
2 cups water
2 cups spinach or kale
Seasoning
1 tsp paprika
½ tsp cumin
1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
1 tbsp tomato paste
Garnish
Fresh parsley
Olive oil drizzle
Instructions
1. Sauté the Aromatics
Heat olive oil in large pot
Add onion and cook until soft
Add garlic and cook 30 seconds
2. Add Vegetables
Add carrots and potatoes
Stir for 2–3 minutes
3. Build the Stew
Add tomatoes and tomato paste
Stir well
Add lentils, broth, and water
Season with paprika, cumin, Italian seasoning, salt, and pepper
4. Simmer
Bring to gentle boil
Reduce heat and simmer 35–40 minutes
Stir occasionally
Chef Tip: The lentils should become tender while the broth thickens naturally.
5. Add Greens
Stir in spinach or kale during last 5 minutes
Cook until wilted
6. Serve
Ladle into a round white bowl/plate
Drizzle olive oil
Sprinkle parsley
Serve warm
